Dark Chocolate Covered Trio

Guyz, I can only go so long without posting a chocolate related recipe and I don’t know what to do with my life. I literally typed that sentence out while eating a piece of coconut dark chocolate 😭

I’m still having food withdrawals from my birthday trip to Austin where I ate so many tacos I think I might die if I eat another one. Just kidding, I still love tacos. I also consumed bacon cheeseburgers, tater tots, chocolate truffles, and lots of coffee. I’m not sure I ate one raw vegetable  – oh wait, the tomato slices on the cheeseburger 🍔

Now I know why it’s so easy being a healthy vegan in Beaumont, Texas. There’s no vegan friendly restaurants here to stuff your face at.

Whether you’re vegan or not, this week’s recipe can satisfy any chocolate craving. 3 simple ingredients whisked together into a velvety cocoa dream and used to coat whatever food your heart desires. I chose to dip fresh raspberries, fresh figs, and fair trade coffee beans into my chocolatey mixture 👌

Hiking Through Big Thicket National Preserve

The cool thing about southeast Texas is that there are a lot of national forests, thanks to all those piney trees 🌲 There’s lots to explore outdoors and back in March I decided to visit Big Thicket National Preserve, which is about a 45 minute drive from the city of Beaumont. Not only does this piney forest smell amazing (!) but it’s home to all sorts of wildlife and vegetation.

The preserve is broken up and spread out all over the area, with several different hiking trails for visitors to enjoy. On this particular day, I explored Kirby Trail near the visitor’s center, and the Sundew Trail just seven miles up the highway. Here are my favorite photos from the day 📷

Like, if I was on a deserted island and I could only bring 5 things with me, these would be them (except maybe the coconut products if there are coconuts on said deserted island 🌴 but even then I probably still would…)

You probably already know how healthy these items are – like the healing properties of turmeric when used as a spice, or replacing regular table salt with Himalayan pink salt, or that coconut oil is not only great for cooking but as a moisturizer too!

But these superfoods have other health benefits that you may not be aware of 💁so I have a list of my 5 favorite little known health hacks that are crazy easy to incorporate into your life.

In this case, it’s okay because Miyoko Schinner of Miyoko’s Kitchen uses nuts to make delicious artisan vegan cheeses. When life gives you nuts, make cheese 😛

Even though I got to sample some of Miyoko’s cheeses at the Vida Vegan Con Bazaar in Austin last summer, I wanted to dig into my very own wheel of vegan cheese and if I happened to eat it all in one sitting, no one would know or judge me 🙈

Fully Loaded Vegan Mac n’ Cheez

Cheesy! Cheesy! Cheesy! I love anything and everything cheesy, and thanks to the miracle of vegan cheese and nutritional yeast, I never to have to live without it.  #blessed ❤️

In all seriousness, this is a really yummy recipe that is perfect for those comfort food cravings that everyone gets, even gluten-free vegans 🙋 Not only is it free of animal product and tons of over processed ingredients, it’s actually kinda healthy and contains wonderful things like turmeric, veggies, and raw cashews. That means it also contains protein, healthy fats, and antioxidants. High five!

Even though I have this recipe categorized under “Dinner,” it’s great for lunch, parties, or to make in a big batch to take to work with you.
