Guyz, I can only go so long without posting a chocolate related recipe and I don’t know what to do with my life. I literally typed that sentence out while eating a piece of coconut dark chocolate 😭

I’m still having food withdrawals from my birthday trip to Austin where I ate so many tacos I think I might die if I eat another one. Just kidding, I still love tacos. I also consumed bacon cheeseburgers, tater tots, chocolate truffles, and lots of coffee. I’m not sure I ate one raw vegetable  – oh wait, the tomato slices on the cheeseburger 🍔

Now I know why it’s so easy being a healthy vegan in Beaumont, Texas. There’s no vegan friendly restaurants here to stuff your face at.

Whether you’re vegan or not, this week’s recipe can satisfy any chocolate craving. 3 simple ingredients whisked together into a velvety cocoa dream and used to coat whatever food your heart desires. I chose to dip fresh raspberries, fresh figs, and fair trade coffee beans into my chocolatey mixture 👌

It’s no secret that chocolate is my favorite food. It’s considered a food group, right? 🍫 🍪 Well, it should be. Who do I call about that?

And ever since I rented out a house with a fig tree in the yard a few years ago, I’ve been obsessed with fresh figs. When I combine these two loves together, what do I get?

These Dark Chocolate Dipped Figs are so easy to make. They make a great snack or dessert, only contain a handful of ingredients, and they’re vegan! Win/win/win. They’re incredibly sweet and juicy, with chocolately goodness and a hint of saltiness.

Despite being incredibly tasty, fresh figs have numerous health benefits. Here are a few:

  • good source of potassium, which helps lower blood pressure
  • full of dietary fiber, which has a positive effect on weight management
  • source of the trace mineral manganese
  • fig leaves contain anti-diabetic properties and lower the level of triglycerides, and can possibly inhibit the growth of some cancer cells

Fig season is just about over, so if your local store still has them in stock (or if you’re lucky enough to have access to a fig tree), grab some and make this delicious and healthy treat!

This may be the most beautiful recipe I’ve shot yet! And it’s not because of my mad photography skills – all the credit goes to the food and it’s natural beauty💄💅 Not to mention, this chia seed pudding allows me to consume chocolate in breakfast form. Now I just gotta work on lunch and dinner.

I’ve made this recipe a handful of times since photographing it and I love it because it’s so simple to make. Simple is good since I’m one of those people that wakes up and refuses to talk or make contact with anyone until I’ve had coffee and breakfast + a substantial amount of time to process the fact that it’s morning and I’m awake. So basically, I’m delightful. 👿

Vegan S’mores Fudge Brownies

These brownies are flaming good. Literally. The last part of the recipe requires you to broil the brownies to get the marshmallows nice and toasty looking. They only need 1 minute to broil and they are ready. But I got distracted and left them in the oven for 3-5 minutes. When I went to get them, surprise! They were on fire. My first thought was to grab some water, but I put so much time and effort into these brownies, I wasn’t about to demolish them because of a semi-raging fire. Luckily the flames went out quickly and I was greeted by the shrill tones of the smoke detector, which I promptly ripped off the wall. When all was said and done, my poor brownies were covered in a layer of ashy marshmallow. On the plus side, after I scraped it off, the brownies looked and tasted great. Lesson of this story? Just because your recipe doesn’t go quite as planned don’t freak out. Sometimes it will turn out even better!

Here are some more surprises from my Vegan S’mores Fudge Brownies: they are gluten-free, they contain roasted beets, and the base of the batter is black beans! However, these brownies taste just as good as any brownie made with wheat flour and dairy products. No one would ever suspect they have veggies and legumes in them!

Best. Cupcakes. Ever. I’m not kidding. These bad boys are seriously chocolately and super duper moist. No milk, no eggs, just… beets?

Yes, you’re reading that right. My friend Salina found the recipe for these cupcakes over at The Minimalist Baker and they looked so delicious that we made them the same day. Not only are beets healthy, but they create a rich moistness to the texture of the cake. And since this is a vegan recipe, they also act as a great egg replacer. Plus, all of your non-vegan friends will love these cupcakes despite the fact that they don’t – gasp – have dairy in them!
