Chia Lemon Muffins

For the longest time I hated lemon flavored sweets. I couldn’t understand why anyone would want to eat lemon candies or lemon desserts or lemon ice cream. I mean, what kind of psycho would choose lemon cake over chocolate cake? It just isn’t right. But slowly, my love for lemons began to shine through my chocolate exterior. Finally, I could admit to myself that lemon squares are delicious. Lemon sorbet? Don’t mind if I do. Raw lemon cheesecake? Even better!

So I decided to make lemon muffins for the first ever last week, and I also added chia seeds because one can never have too many chia seeds. The result? A hearty, flavorful muffin that tastes super amazing with homemade strawberry jam and a cup of coffee ☕️🍓

Gluten Free Banana Chia Pancakes

I always thought pancakes were these elusive, complex and hard to make breakfast foods and that’s why everyone always used Bisquick 🙈

It wasn’t until last year that I realized they are actually really simple to make in a healthy and totally vegan/gluten free/delicious manner. I pretty much stick with the same recipe I use when I make muffins because it works (and I’m lazy).

These Gluten Free Banana Chia Pancakes have 9 ingredients and in 4 easy steps you can have filling, moist pancakes topped with all the fresh fruit, nuts, coconut flakes, goji berries, maple syrup and chocolate chips you want. Plus, I have a trick for making one batch of pancakes at the beginning of the week that will last you several mornings because my laziness has made me resourceful 👍

This may be the most beautiful recipe I’ve shot yet! And it’s not because of my mad photography skills – all the credit goes to the food and it’s natural beauty💄💅 Not to mention, this chia seed pudding allows me to consume chocolate in breakfast form. Now I just gotta work on lunch and dinner.

I’ve made this recipe a handful of times since photographing it and I love it because it’s so simple to make. Simple is good since I’m one of those people that wakes up and refuses to talk or make contact with anyone until I’ve had coffee and breakfast + a substantial amount of time to process the fact that it’s morning and I’m awake. So basically, I’m delightful. 👿

Okay, I’m not going to lie, these scones don’t photograph very well. Luckily, they taste amazing and pictures just don’t do them justice. First off, you’re probably noticing the dark pink color – you can thank roasted beets for that. And now you might be thinking Wait, beets? Those don’t belong anywhere near scones, especially chocolate chip scones. Well friends, I beet (I mean bet, see what I did there?)  you will love these! If you’re still on the fence, hop over and take a look at these Fudgy Vegan Beet Cupcakes and you might change your mind about this versatile root vegetable. In fact, beets are incredibly nutritious and what better way to increase your veggie intake than through scones and cupcakes? Dream come true. Plus, these would make a great Valentine’s Day treat!

*If you aren’t a huge scone lover like me, you can easily make these into lovely pink cookies*

Here’s my beet after I wrapped it tightly in foil and roasted it in the oven at 375 degrees for about an hour. It turns a deep, rich purple color. You want it to be fork tender.

So many scones, so little time… That’s my motto these days. Scones seem to be my new food obsession, or just my new obsession in general. All I wanna do is eat scones. Scones with hot tea. Scones with coffee. Scones with a side of scones. What I love about this recipe for Pumpkin, Banana & Peanut Butter Scones is that they are vegan and gluten free, so you can eat several and not worry about skyrocketing your insulin levels, gaining weight, or consuming a bunch of processed ingredients. Plus, they are deeeeelicious!
