I’ve been super healthy all week. No french fries. Not a lot of processed foods. But I’m craving something salty. I loooove chips. They are my weakness. So I decide to have a snack and pour myself a nice bowl of brussels sprouts chips?… No, I haven’t gone bonkers. And I know that chips and brussels sprouts aren’t normally put together in the same sentence. But for all you plant loving people out there that have made or eaten kale chips, it’s the same concept.

Crispy, salty, slightly tangy chips made from bite sized brussels sprouts that are drizzled in olive oil and baked in the oven. Yes. So much yes 👌🎉

Did you know that this stinky, cruciferous veggie contains more cancer fighting phytonutrients than those found in kale, broccoli, cauliflower, cabbage, or mustard greens? Brussels sprouts are also anti-inflammatory, good for heart health, promote digestive support, and when cooked properly they contain tons of vitamin K, vitamin C, folate, and a host of other nutrients.

Okay, I’m not going to lie, these scones don’t photograph very well. Luckily, they taste amazing and pictures just don’t do them justice. First off, you’re probably noticing the dark pink color – you can thank roasted beets for that. And now you might be thinking Wait, beets? Those don’t belong anywhere near scones, especially chocolate chip scones. Well friends, I beet (I mean bet, see what I did there?)  you will love these! If you’re still on the fence, hop over and take a look at these Fudgy Vegan Beet Cupcakes and you might change your mind about this versatile root vegetable. In fact, beets are incredibly nutritious and what better way to increase your veggie intake than through scones and cupcakes? Dream come true. Plus, these would make a great Valentine’s Day treat!

*If you aren’t a huge scone lover like me, you can easily make these into lovely pink cookies*

Here’s my beet after I wrapped it tightly in foil and roasted it in the oven at 375 degrees for about an hour. It turns a deep, rich purple color. You want it to be fork tender.

Best. Cupcakes. Ever. I’m not kidding. These bad boys are seriously chocolately and super duper moist. No milk, no eggs, just… beets?

Yes, you’re reading that right. My friend Salina found the recipe for these cupcakes over at The Minimalist Baker and they looked so delicious that we made them the same day. Not only are beets healthy, but they create a rich moistness to the texture of the cake. And since this is a vegan recipe, they also act as a great egg replacer. Plus, all of your non-vegan friends will love these cupcakes despite the fact that they don’t – gasp – have dairy in them!
