Y’all, it’s actually cold in South Texas! ❄️☃️

It’s been cold and rainy off and on these past couple of weeks, and we even got snow one morning! I’ve been drinking lots of homemade hot chocolate and snuggling with my foster dog, Opal. Then I remembered this warm, hearty soup I made not too long ago and thought it would be the perfect recipe to post.

This delish soup is my version of Kimberly Snyder’s Red Lentil and Carrot Stew. When it comes to soups and stews, I like to keep it simple, and I’m not a big fan of cooked carrots, so I changed things up just slightly. Make this savory soup for your friends and family, or store in the fridge and have ready made meals! Full of nutrients, fiber, and protein, this Red Lentil & Kale Stew is the perfect cold weather meal!

I don’t know how you feel about breakfast, but for me, it’s verrrry important. Not only am I ravenous when I wake up in the morning, but I definitely notice a difference if I don’t eat anything. I’ll get light headed, have trouble focusing, hunger pains, headaches, procrastinate, and can be extremely agitated and grumpy. None of that is worth skipping breakfast!

That’s what I love about this recipe, other than the fact that it tastes super yummy, is that it’s full of nutrients to keep me going the rest of the day… or at least until lunchtime 🙂

This week’s recipe is all about green! It’s a really easy lunch or dinner recipe that is full of nutrients, and it’s sooooo filling! I went crazy during my first grocery shopping trip back in the States (from China) and bought some of my favorite foods that I’d been missing, including kale, avocado, quinoa, nutritional yeast, and Daiya cheese. The recipe came to me one afternoon and was most likely motivated by my ravenous appetite. I hope you enjoy it!

My China Diet

I just returned home to Texas after a six month stay in Beijing, where I was teaching English to little kids and cultivating my blog. Before I went, I imagined that being a vegan in China would be fairly easy. Even though China has adopted a more Westernized diet in recent years (lots of meat and dairy), I figured it would be pretty easy to find plant based dishes.

Boy was I wrong! All I ate the first two months I lived there was rice with vegetables because that’s all I could find in the way of vegan options. That got tiring after a while and didn’t give me an array of needed nutrients. Eating out was wreaking havoc on my digestive and immune systems because the quality of food is so low in China, plus they tend to over-do it with the oil. I was always sick, had headaches, couldn’t sleep well, and felt tired and light headed. I decided to stop eating out, get a blender and food processor, and make all of my meals at home. What a difference!

For anyone that plans on being abroad for an extended amount of time, here are some suggestions for quick, easy meals that are healthy and plant based.

The other day I was making Red Lentil Hummus and I got an idea. I added a little too much water to my lentils when I was cooking them, but when I transferred them to the food processor with my seasonings and blended it, it came out with a cheesy flavor and the consistency of a sauce. I’ve been wanting a super easy vegan cheese recipe, because the one I usually make consists of too many steps and too many ingredients. My Delicious Vegan Cheese Sauce recipe only has six ingredients, is full of fiber and other nutrients, and is super filling and yummy.
