Healing Tropical Turmeric Smoothie

This smoothie is my everything ✨

Not only does it contain plant based healing properties, but it’s refreshing and delicious, and the beautiful bright orange color doesn’t hurt either! Smoothies have become part of my daily diet and I feel like 5 million percent better than my pre-smoothie life. Humans are so used to eating processed foods, even the healthier versions of them, that sometimes eating basic raw fruits & vegetables can be a daily struggle. I know that even if I slip up and eat a whole bag of potato chips or something fried or containing gluten, I feel better knowing that smoothies got my back and I don’t have to have a meltdown because I ruined my day with junk food.

Enter the Healing Tropical Turmeric Smoothie. A coconut based smoothie with healing turmeric and ginger, banana and peaches for natural sweetness, and carrots for fiber and a pop of color.

Check out my very first recipe video for this easy to make smoothie! I’m sure there are tech savvy 10 year olds out there that could create a better video than this, but it was super fun to make and I’m sure my video skills will improve from here on out. Let me know what you think!

When I first went vegan about six years ago, it didn’t take long at all for me to look at my dogs and wonder “What about them?” I began to do research about what my dogs were eating, which at the time was store bought dog food. I discovered that a lot of the same things that are good for humans are good for our domesticated companions, and that many people make homemade dog food over feeding them processed foods. I also discovered that when I whenever I cooked food for them at home, they wolfed it down faster than the speed of light ⚡️

Once I began working at a no-kill dog shelter, I learned even more about the unhealthy ingredients that make up the main brands of dog food, how many chemicals and additives and fillers are in them, and how some of these dog foods are made. It’s pretty unsavory 😷🙅

I decided to compile some information and ideas about food alternatives for your four-legged friends to keep them healthy and fabulous 🐩👑

It’s been raining nonstop here in Austin, Texas. The humidity has been off the chain and my hair is very unhappy. However, it’s been great for the greenery and all the lakes. I’m hoping it means this summer won’t be quite as scorching as usual. But that’s probably just a pipe dream…

On the plus side, broccolini popped in my brain the other day and I ran with it. Broccolini is one of those veggies that people tend to forget about, but it’s full of vitamins and nutrients, easy to prepare, and very yummy. I decided to create a recipe using this cruciferous vegetable and I came up with the idea of making cheesy brown rice patties and broccolini. I wasn’t sure if it would work, but I had a feeling it would, and the end result was better than I expected.

Cheesy Veggie Tofu Scramble

I don’t know how you feel about breakfast, but for me, it’s verrrry important. Not only am I ravenous when I wake up in the morning, but I definitely notice a difference if I don’t eat anything. I’ll get light headed, have trouble focusing, hunger pains, headaches, procrastinate, and can be extremely agitated and grumpy. None of that is worth skipping breakfast!

That’s what I love about this recipe, other than the fact that it tastes super yummy, is that it’s full of nutrients to keep me going the rest of the day… or at least until lunchtime 🙂

My China Diet

I just returned home to Texas after a six month stay in Beijing, where I was teaching English to little kids and cultivating my blog. Before I went, I imagined that being a vegan in China would be fairly easy. Even though China has adopted a more Westernized diet in recent years (lots of meat and dairy), I figured it would be pretty easy to find plant based dishes.

Boy was I wrong! All I ate the first two months I lived there was rice with vegetables because that’s all I could find in the way of vegan options. That got tiring after a while and didn’t give me an array of needed nutrients. Eating out was wreaking havoc on my digestive and immune systems because the quality of food is so low in China, plus they tend to over-do it with the oil. I was always sick, had headaches, couldn’t sleep well, and felt tired and light headed. I decided to stop eating out, get a blender and food processor, and make all of my meals at home. What a difference!

For anyone that plans on being abroad for an extended amount of time, here are some suggestions for quick, easy meals that are healthy and plant based.
