Oh bright yellowy goodness 💛 🌞 (That would be homemade cashew cheese sauce y’all)

I came up with this recipe on the fly because I wanted something filling and easy to make that I could store in the fridge and eat for several days with zero effort to prepare. And so this cheesy Chicken & Veggie Quinoa Casserole was born 👶

It’s got loads of protein coming from the Beyond Meat chicken strips and quinoa, good fats from the cashews, and anti-inflammatory properties in the turmeric. Plus, it’s utterly delicious and you will wolf it down faster than you can blink 🐺 Not to mention, like all of my other recipes, it’s vegan and gluten free!

Cheesy! Cheesy! Cheesy! I love anything and everything cheesy, and thanks to the miracle of vegan cheese and nutritional yeast, I never to have to live without it.  #blessed ❤️

In all seriousness, this is a really yummy recipe that is perfect for those comfort food cravings that everyone gets, even gluten-free vegans 🙋 Not only is it free of animal product and tons of over processed ingredients, it’s actually kinda healthy and contains wonderful things like turmeric, veggies, and raw cashews. That means it also contains protein, healthy fats, and antioxidants. High five!

Even though I have this recipe categorized under “Dinner,” it’s great for lunch, parties, or to make in a big batch to take to work with you. When I first went vegan about six years ago, it didn’t take long at all for me to look at my dogs and wonder “What about them?” I began to do research about what my dogs were eating, which at the time was store bought dog food. I discovered that a lot of the same things that are good for humans are good for our domesticated companions, and that many people make homemade dog food over feeding them processed foods. I also discovered that when I whenever I cooked food for them at home, they wolfed it down faster than the speed of light ⚡️

Once I began working at a no-kill dog shelter, I learned even more about the unhealthy ingredients that make up the main brands of dog food, how many chemicals and additives and fillers are in them, and how some of these dog foods are made. It’s pretty unsavory 😷🙅

I decided to compile some information and ideas about food alternatives for your four-legged friends to keep them healthy and fabulous 🐩👑

This may be the most beautiful recipe I’ve shot yet! And it’s not because of my mad photography skills – all the credit goes to the food and it’s natural beauty💄💅 Not to mention, this chia seed pudding allows me to consume chocolate in breakfast form. Now I just gotta work on lunch and dinner.

I’ve made this recipe a handful of times since photographing it and I love it because it’s so simple to make. Simple is good since I’m one of those people that wakes up and refuses to talk or make contact with anyone until I’ve had coffee and breakfast + a substantial amount of time to process the fact that it’s morning and I’m awake. So basically, I’m delightful. 👿

This week’s recipe is all about green! It’s a really easy lunch or dinner recipe that is full of nutrients, and it’s sooooo filling! I went crazy during my first grocery shopping trip back in the States (from China) and bought some of my favorite foods that I’d been missing, including kale, avocado, quinoa, nutritional yeast, and Daiya cheese.
