This fudgetastic recipe came about when I was bored one day and decided to go in the kitchen and create something with whatever ingredients I had on hand. Ever since going vegan, I hardly crave sweets anymore, but I do like baking on a fairly regular basis and being able to use healthier sugar alternatives like maple syrup and coconut sugar, and just enough to sweeten it without it being sugary. That’s one of the many reasons this recipe works so well. Plus, the whole chocolate fudge, hint of peanut butter + rich macadamia flavor doesn’t hurt either πŸ˜‹

This cake is really easy to make, gluten free and a healthier alternative when you want something sweet and chocolatey!

Guyz, I can only go so long without posting a chocolate related recipe and I don’t know what to do with my life. I literally typed that sentence out while eating a piece of coconut dark chocolate 😭

I’m still having food withdrawals from my birthday trip to Austin where I ate so many tacos I think I might die if I eat another one. Just kidding, I still love tacos. I also consumed bacon cheeseburgers, tater tots, chocolate truffles, and lots of coffee. I’m not sure I ate one raw vegetableΒ  – oh wait, the tomato slices on the cheeseburger πŸ”

Now I know why it’s so easy being a healthy vegan in Beaumont, Texas. There’s no vegan friendly restaurants here to stuff your face at.

Whether you’re vegan or not, this week’s recipe can satisfy any chocolate craving. 3 simple ingredients whisked together into a velvety cocoa dream and used to coat whatever food your heart desires. I chose to dip fresh raspberries, fresh figs, and fair trade coffee beans into my chocolatey mixture πŸ‘Œ

This will be my fourth recipe featuring sweet potatoes 🍠 As you can tell, I don’t like them at all πŸ˜‚

I have my savory Sweet Potato Fries with Magic Sauce which I eat on a weekly basis because they’re so amazing, and then there’s this divine Chocolate Sweet Potato Cake with Coconut Creme Fraiche situation going on. Today’s recipe is similar to one of my earliest recipes I ever posted on this website for Sweet Potato Pudding. It came to me after I got cute little sample bags of Dandies Marshmallows at the Vida Vegan Con Bazaar in Austin.

Creamy, blended sweet potato topped with melted vegan butter, cinnamon, dark chocolate chips, and puffy vegan marshmallows. Just as satisfying as an ice cream sundae 🍨 but waaaaay healthier and cruelty free!

Oh heyyy there, don’t mind me drooling/crying over this mouthwatering cake situation πŸ˜‚ Maybe you’re thinking that I’ve finally lost my marbles because chocolate and sweet potato are two foods that you would never imagine mixing together. But wait! βœ‹ Let’s stop and think about this for a minute. After making the most delicious confections using beets as my secret ingredient (Fudgy Vegan Beet Cupcakes, Vegan S’mores Fudge Brownies, and Chocolate Chip Chia Beet Scones), I began to wonder what else I could bake using earthy root vegetables, because they make baked goods moist & amazing without tasting like earthy root vegetables.

Around this time I also began binge eating sweet potatoes in many forms, but mostly in the form of these Sweet Potato Fries with Magic Sauce. Let’s just take a minute and give sweet potatoes a shout out πŸ‘πŸ’˜πŸ˜˜πŸ 

What I came up with was a moist chocolate cake with a subtle sweetness, topped off with coconut creme fraiche and fresh mint 😍 You can thank me later.

It’s no secret that chocolate is my favorite food. It’s considered a food group, right? 🍫 πŸͺ Well, it should be. Who do I call about that?

And ever since I rented out a house with a fig tree in the yard a few years ago, I’ve been obsessed with fresh figs. When I combine these two loves together, what do I get?

πŸŽ‰πŸŽŠπŸ†πŸ˜‚β€οΈπŸ‘πŸŽ‰

These Dark Chocolate Dipped Figs are so easy to make. They make a great snack or dessert, only contain a handful of ingredients, and they’re vegan! Win/win/win. They’re incredibly sweet and juicy, with chocolately goodness and a hint of saltiness.

Despite being incredibly tasty, fresh figs have numerous health benefits. Here are a few:

  • good source of potassium, which helps lower blood pressure
  • full of dietary fiber, which has a positive effect on weight management
  • source of the trace mineral manganese
  • fig leaves contain anti-diabetic properties and lower the level of triglycerides, and can possibly inhibit the growth of some cancer cells

Fig season is just about over, so if your local store still has them in stock (or if you’re lucky enough to have access to a fig tree), grab some and make this delicious and healthy treat!
