I finally did it! I have been wanting to make carrot lox for quite a while now, but it seemed complicated, so I never did. That is, until I was recently looking up carrot lox recipes on Youtube and found this easy one by the Edgy Veg. I decided to give it a try and WOW – I’m so glad I did! Made some cashew cream cheese while I was at it and let me tell you, this is the perfect breakfast, brunch, lunch, there’s no bad time for vegan lox.

I’m somewhat of a lox connoisseur, having grown up with a Jewish dad and a grandma from New York, I was scarfing down lox and bagels almost since birth. Lucky for me, this recipe for vegan smoked salmon & cream cheese imitates the same smoky, tangy, flavorful non-vegan version I remember. And it doesn’t take as much effort as you would think!

Buffalo Cauliflower Bites

“Wings” made from cauliflower are pretty popular around Super Bowl time to replace the non-version wings that are served up at all the parties. I’m a couple of months late for the Super Bowl, so maybe these can be Easter wings??? In my opinion, cauliflower wings are perfect any time of the year, including these buffalo cauliflower bites. They have just the right amount of tang and spiciness. They are also very filling, which causes a quandary because they are so delicious it is hard to stop eating them! Vegan Brownies with Peanut Butter Frosting

Since everyone is social distancing and staying home to avoid contracting and spreading COVID-19, now is a great time to get creative in the kitchen and spend more time cooking, baking, and eating yummy homemade food.

Personally, I’ve been craving desserts, which is kind of unusual for me, but with so much time on my hands I’ve been surrendering to my sweet tooth by making cookies, apple pie, and this brownie recipe I discovered! It’s incredibly easy and makes delicious, moist brownies. Of course, I couldn’t stop there. I love a good chocolate and peanut butter combo, so I decided to try my hand at making peanut butter frosting for the first time ever. The result? Well, see the video below – it stars the brownies, my rescue dog Stella, and the musical talents of my boyfriend!

Savory Baked Plantain Chips

So, I tried to make baked tostones, but I sliced them too thin and didn’t mash them, so I ended up with plantain chips! Still delicious, but very different from the original tostones. Plantains look like bananas and are in the same family, but do not contain as much sugar and are not eaten raw like bananas. When cooked, however, they are delicious! These plantain chips are crunchy, slightly browned, with a thin coat of olive oil and salt, and go great with guacamole!!

Candy Corn Fruit Juice

I realize this post may be deceiving because candy corns are associated with Halloween, which is in October, and I’m posting this in May. The “candy corn” part of the recipe is aesthetics only – it tastes like full on summer, trust me. I decided to shoot some footage of me creating this recipe awhile back, and recently felt motivated to edit it together, so here’s to Halloween in May!

This fruit juice is sweet (also hence the word “candy” in the title) and tropical tasting, so kids will love it too, and it’s full of detoxifying properties and immune boosting vitamins. Plus, it’s easy to make and has simple ingredients. Serve it at your Halloween party or as a healthy alternative to sugary, artificial candy and processed juices.
