Simple Baba Ganoush

June 10, 2016 by Jillian Leave a Comment

simple baba ganoush

baba ganoush

Is there anything better than slices of eggplant drizzled with olive oil, broiled to perfection, then blended together with lemon/tahini/garlic to create a creamy and decadent dip?…

Didn’t think so. And did I mention that it’s naturally vegan and gluten free? πŸ† πŸ…

If I had known how easy this baba ganoush recipe from Minimalist Baker was to make, I would’ve been making it like ten years ago. Of all the weird places for me to try baba ganoush for the first time was in a little Mediterranean cafe in Shanghai, China. If you’ve never had it, it’s basically like an amped up, tangier, more exotic version of hummus in my opinion.

And for those of you that think you have to grill the eggplant first or do some extensive prepping – you don’t. This recipe is seriously easy. It doesn’t require a ton of ingredients. Once the eggplant is broiled, all you have to do is toss everything into the blender. And bam! You’ve got a delicious snack that also contains vitamins & nutrients not only from the eggplant, but the lemon juice, parsley, garlic, and those healthy fats from the tahini and olive oil. Yes, yes and yassss πŸ‘…

Arlo’s: Vegan Food Done Right

September 3, 2015 by Jillian Leave a Comment

arlo's vegan food done right

Meet Arlo’s Bac’n Cheez Burger. Me and BCB (for short) are good friends.

Us vegans are just like everyone else. IΒ  know some people may think all we eat is tofu and carrots and hemp seeds (and yes, we do eat those things) but we want to indulge in comfort food too, dang it! πŸ”πŸŸ

That’s where Arlo’s comes in. If you live in Austin, Texas – aka Land of Vegan Bliss – then you are in luck. Arlo’s is comprised of two food trucks that are conveniently located in the downtown area. Also convenient, as least for me, is that they are parked right in front of two awesome bars 🍺🍷This pretty much completes my life. The main location is at Cheer Up Charlie’s, right in the heart of Austin’s famous music scene. And they have a new location along a very popular strip on the east side at Drinks Lounge. I went to their opening a couple of weeks ago and it was packed! Arlo’s is well loved here.

Vegans Love Pitbulls!

pitbull kissing booth

Last month there were so many animal events going on in Austin that I could barely keep my head on straight! There were also a lot of vegan events, so as you can imagine, I felt like a kid on Christmas – if Christmas was in June and lasted the entire month.Β πŸŽπŸŽ„

Since I’m really busy this week working on a film job, I thought I would just post some of my favorite pictures from a couple of those events. Scroll down to see cute pitties, delicious vegan food, and some of the fun happenings that make Austin such a cool city.

Weekly Reunion Rescue @ Spiderhouse

Reunion Rescue is a local pitbull rescue group and founder Cindy sets up camp at a popular coffeehouse near the University of Texas to educate people, get donations to help the dogs, and most importantly, get them adopted! On the particular day that I showed up, there were 3 adorable pitbulls with Cindy, all looking for their forever homes.

Meet Amber and her cute nose:

Amber

As you can see above, Amber was an abuse case and most likely had acid or something similar poured over her head. Yet when I met her, she was as sweet as could be and loves children!

Vida Vegan Con Bazaar 2015

vida vegan con bazaar

This past weekend was the third annual Vida Vegan Con Bazaar & Conference in Austin, Texas. The conference itself, which took place on Saturday and Sunday, was sold out by the time I caught word of the event, but luckily, I was able to snag a ticket to the Friday Bazaar. It was held at the Marchesa Hall & Theatre, which holds many annual events and is the home of the Austin Film Society.

Out front were local vegan food trucks, including Cool Beans, Arlo’s and more. Inside was a flurry of vendors and people and food and freebies and it was awesome. Like, seriously. Getting to be surrounded by friendly vegans while sampling delicious food and discovering new products is pretty cool. Here are some of my favorite photos from the Vegan Bazaar, starting with the food!
