Chocolate Chip Cookie Cake

You know it’s gonna be a good cake when it’s the same exact color as your wooden table 👌😂

But really, it’s got those crispy brown edges, caramel color, chocolate chips, and a perfect rise. These are all things you can see, but how does it taste you ask? Well, it’s got that nice moist cakey flavor, bursts of dark chocolate, and tastes amazing with a cold glass of coconut milk. And did I mention this cake is vegan, gluten free, and contains nutrient dense ingredients? Yep, it does 😘

I realize summer is in full swing and that means 90+ degree weather for most people and the last thing you wanna do is turn on the oven and make your house feel like the depths of hell, but trust me, this cake is totally worth it. Turmeric Persimmon Nice Cream

Summer is just around the corner! Unless you live in South Texas like me, in which case, it’s summer year round 🔥

But I’m okay with that because it means it’s always nice cream weather. I’m still going strong 2+ years into my obsession with banana nice cream and all it’s versatility/deliciousness. I used to make chocolate peanut butter nice cream all the time and I still love it, but lately I’ve been coming up with new flavors 🍌🍨

Enter Turmeric Persimmon Nice Cream. There’s something about persimmon that kicks up the nice cream game like a million notches. Persimmon adds natural sweetness, a gorgeous bright orange color, and a creaminess that I can’t even explain but it’s amazing. Bananas are one of nature’s most perfect foods and lends more natural sweetness as the creamy base for this recipe. Finally, ground turmeric balances out all the sweetness from the persimmon and banana, adds to the vibrant color, and contributes antioxidants and other healing properties.

Blend this dish up in just a few minutes, then top with coconut flakes, fresh fruit, and coconut whipped cream. I love having this Turmeric Persimmon Nice Cream for lunch, a snack, dessert – I’ve even had it for breakfast! Aside from being sweet and creamy and A++ all around, it gives you a ton of energy to go about your day.

Vegan Vanilla Whipped Cream

To all the whipped cream lovers out there, no need to ever consume dairy whipped again or buy super expensive vegan whipped cream at a health foods store! Whipped cream made from coconut milk in a can has solved all these problems and more. Plus, I find it to be even more delicious than dairy whipped cream, which is so basic now 💁

I mean, why consume a saturated fat-filled product made from a milk designed for calves, when you can eat healthy fats from coconuts and get flavor + nutrients? It’s a no brainer to me!

Watch the video below for the crazy simple recipe and then slather your homemade whipped cream on anything and everything you want. I’ve used it in the morning as a topping on oatmeal, chocolate chia seed pudding, and even coffee. I’ve also used it to top baked goods, banana nice cream, and even my black teas ☕️ Basically, it’s amazing on everything!

Once you make this vegan vanilla whipped cream, you’ll always want to have a fresh batch in your fridge and you won’t want to go back to regular ‘ol dairy.

Peanut Butter Macadamia Chocolate Fudge Cake

This fudgetastic recipe came about when I was bored one day and decided to go in the kitchen and create something with whatever ingredients I had on hand. Ever since going vegan, I hardly crave sweets anymore, but I do like baking on a fairly regular basis and being able to use healthier sugar alternatives like maple syrup and coconut sugar, and just enough to sweeten it without it being sugary. That’s one of the many reasons this recipe works so well. Plus, the whole chocolate fudge, hint of peanut butter + rich macadamia flavor doesn’t hurt either 😋

This cake is really easy to make, gluten free and a healthier alternative when you want something sweet and chocolatey!

Dark Chocolate Covered Trio

Guyz, I can only go so long without posting a chocolate related recipe and I don’t know what to do with my life. I literally typed that sentence out while eating a piece of coconut dark chocolate 😭

I’m still having food withdrawals from my birthday trip to Austin where I ate so many tacos I think I might die if I eat another one. Just kidding, I still love tacos. I also consumed bacon cheeseburgers, tater tots, chocolate truffles, and lots of coffee. I’m not sure I ate one raw vegetable – oh wait, the tomato slices on the cheeseburger 🍔

Now I know why it’s so easy being a healthy vegan in Beaumont, Texas. There’s no vegan friendly restaurants here to stuff your face at.

Whether you’re vegan or not, this week’s recipe can satisfy any chocolate craving. 3 simple ingredients whisked together into a velvety cocoa dream and used to coat whatever food your heart desires. I chose to dip fresh raspberries, fresh figs, and fair trade coffee beans into my chocolatey mixture 👌
