One day a few months ago I decided that I wanted vegan nachos, and pretty much threw together a recipe as I went along. I had made vegan nachos before, but these were different. “Wings” made from cauliflower are pretty popular around Super Bowl time to replace the non-version wings that are served up at all the parties. I’m a couple of months late for the Super Bowl, so maybe these can be Easter wings??? In my opinion, cauliflower wings are perfect any time of the year, including these buffalo cauliflower bites. They have just the right amount of tang and spiciness. They are also very filling, which causes a quandary because they are so delicious it is hard to stop eating them! Savory Baked Plantain Chips
So, I tried to make baked tostones, but I sliced them too thin and didn’t mash them, so I ended up with plantain chips! Still delicious, but very different from the original tostones. Plantains look like bananas and are in the same family, but do not contain as much sugar and are not eaten raw like bananas. When cooked, however, they are delicious! These plantain chips are crunchy, slightly browned, with a thin coat of olive oil and salt, and go great with guacamole!!

Homemade Almond Butter has become a staple in my house. I make it about once every week or two, and it’s cheaper and much tastier than buying it at the store! This almond butter tastes perfect with sliced apples, on a sandwich with banana, or even as a sauce on dark chocolate – yum! And I have a couple of secret tips to make sure each batch always comes out delicious!
Vegan Cream Cheese with Dill Crackers
When I made this recipe, I took the leftover green onions that I didn’t use and put them in my compost pile. Well, a few months later, a completely new green onion plant grew from it! It reminded me how delicious this recipe was and that I needed to post it. I looked up a few different vegan cream cheese recipes online and incorporated ideas from all of them to create this recipe. The result? A smooth, creamy cheese that is perfect for a party, get together, appetizer, or just a snack. The dill crackers go with this dish perfectly, and they are so easy to make!
