Sweet Potato Sundae

April 18, 2016 by Jillian Leave a Comment

sweet potato sundae

This will be my fourth recipe featuring sweet potatoes 🍠 As you can tell, I don’t like them at all πŸ˜‚

I have my savory Sweet Potato Fries with Magic Sauce which I eat on a weekly basis because they’re so amazing, and then there’s this divine Chocolate Sweet Potato Cake with Coconut Creme Fraiche situation going on. Today’s recipe is similar to one of my earliest recipes I ever posted on this website for Sweet Potato Pudding. It came to me after I got cute little sample bags of Dandies Marshmallows at the Vida Vegan Con Bazaar in Austin.

dandies marshmallows

Creamy, blended sweet potato topped with melted vegan butter, cinnamon, dark chocolate chips, and puffy vegan marshmallows. Just as satisfying as an ice cream sundae 🍨 but waaaaay healthier and cruelty free!

Sugar, Spice, and Everything Nice Plum Cake

March 15, 2016 by Jillian Leave a Comment

sugar, spice, and everything nice plum cake

sugar plum cake

Eeeeee, look at those perfect little sugar plum circles πŸ”΄πŸ”΄πŸ”΄ This recipe really encompasses sugar, spice, and everything nice, especially that last part, because it’s vegan & gluten free 😘

I meant to post this recipe before spring popped up because it totally has cozy winter vibes happening, but cake is a year-round thing, so I figure there’s no time like the present. This would be a great rainy day treat, even in the summer.

I found sugar plums at Central Market at the end of this past summer and conjured up images of fairies and princesses and the Nutcracker and all that jazz, and knew I had to make something tasty. I decided to make a simpler, healthier version of sugar plum cake. It’s moist, not overly sweet, and pairs great with coffee πŸ°Β β˜•οΈ

Chocolate Chip Chia Beet Scones

Okay, I’m not going to lie, these scones don’t photograph very well. Luckily, they taste amazing and pictures just don’t do them justice. First off, you’re probably noticing the dark pink color – you can thank roasted beets for that. And now you might be thinking Wait, beets? Those don’t belong anywhere near scones, especially chocolate chip scones. Well friends, I beet (I mean bet, see what I did there?)Β  you will love these! If you’re still on the fence, hop over and take a look at these Fudgy Vegan Beet Cupcakes and you might change your mind about this versatile root vegetable. In fact, beets are incredibly nutritious and what better way to increase your veggie intake than through scones and cupcakes? Dream come true. Plus, these would make a great Valentine’s Day treat!

*If you aren’t a huge scone lover like me, you can easily make these into lovely pink cookies*

Here’s my beet after I wrapped it tightly in foil and roasted it in the oven at 375 degrees for about an hour. It turns a deep, rich purple color. You want it to be fork tender.

Vegan S’mores Fudge Brownies

These brownies are flaming good. Literally. The last part of the recipe requires you to broil the brownies to get the marshmallows nice and toasty looking. They only need 1 minute to broil and they are ready. But I got distracted and left them in the oven for 3-5 minutes. When I went to get them, surprise! They were on fire. My first thought was to grab some water, but I put so much time and effort into these brownies, I wasn’t about to demolish them because of a semi-raging fire. Luckily the flames went out quickly and I was greeted by the shrill tones of the smoke detector, which I promptly ripped off the wall. When all was said and done, my poor brownies were covered in a layer of ashy marshmallow. On the plus side, after I scraped it off, the brownies looked and tasted great. Lesson of this story? Just because your recipe doesn’t go quite as planned don’t freak out. Sometimes it will turn out even better!

Here are some more surprises from my Vegan S’mores Fudge Brownies: they are gluten-free, they contain roasted beets, and the base of the batter is black beans! However, these brownies taste just as good as any brownie made with wheat flour and dairy products. No one would ever suspect they have veggies and legumes in them!

Chocolate Chip Pumpkin Brownies

I like pumpkin. I like chocolate (understatement). I like brownies. So my little, tiny, genius mind thought “Why not put them all together?” Before I even came up with the recipe, I just knew it would be tasty. It had to be. How could it not? Well, they came out perfectly – just a tad of crunch on the outside, gooey melted chocolate on the inside, and the thick, moist pumpkin that gives it all a great consistency. There are some recipes that I make one time and I’m good. But this is a recipe that I intend to make again and again. It’s yummy, easy to make, gluten free, vegan, and as close as you can get to healthy when it comes to brownies.

Plus, look at that color! Just beautiful. These will make great treats during Halloween time, but trust me, you need to try these brownies now. RIGHT NOW.
