Oh bright yellowy goodness ๐Ÿ’›ย ๐ŸŒž (That would be homemade cashew cheese sauce y’all)

I came up with this recipe on the fly because I wanted something filling and easy to make that I could store in the fridge and eat for several days with zero effort to prepare. And so this cheesy Chicken & Veggie Quinoa Casserole was born ๐Ÿ‘ถ

It’s got loads of protein coming from the Beyond Meat chicken strips and quinoa, good fats from the cashews, and anti-inflammatory properties in the turmeric. Plus, it’s utterly delicious and you will wolf it down faster than you can blink ๐Ÿบ Not to mention, like all of my other recipes, it’s vegan and gluten free!

Whenever I see or hear the name Nacogdoches it always makes me think of nachos. Yummm…

This little college town located in central southeast Texas got it’s name from the Nacogdoche tribe of Caddo Indians that inhabited the site 10,000ย  years ago. As the oldest town in Texas, Nacogdoches is rich with history, famous Texans, and beautiful flowers. I took a day trip to explore this lovely town and was pleasantly surprised.

Did you know that you don’t need eggs, butter, milk, or wheat flour to make delicious baked goods? If you’re vegan and/or gluten free you already know that, or maybe you aren’t either of those but you’re in the loop about these thingsย ๐Ÿ˜‰

It’s a myth that you need wheat and dairy to create moist and tasty bread, cookies, cakes, basically everything ๐Ÿช ๐Ÿฐย ๐Ÿฉ

Today’s recipes is one of my favorites that I make often, and I like it because you can bend the recipe based on what ingredients you have on hand. It also works in muffin or scone form! This Chocolate Chip Banana Bread is full of hearty, plant based ingredients with lots of chocolate banana-y goodness that is moist with every single bite!

Living down in southeast Texas in the dead of summer in a house with window units means constantly battling the harsh contrast of humidity that smothers you like a wet blanket with the dry blast of icy cold air blowing from a big white box directly into your face. It’s the perfect combination… if you like constantly having your allergies/sinuses flare up at a time of the year when you should be focused on swimming and eating ice cream and putting on sunblock โ˜€๏ธย ๐Ÿ•ถ

Luckily, I’ve come up with a pretty decent attack plan on my part that includes all homeopathic, vegan remedies that help me cycle through any flare ups pretty quickly. Aside from these special remedies, I make sure that I bulk up on the daily supplements that I’m already taking. I’ve seen some pretty positive side effects from these three magic pills that I can find at my local grocery store and I’m super pumped ๐Ÿ‘Š

I personally believe that you should try to get all of your vitamins and minerals from the foods you eat. So I look at these supplements as little “extras” that help keep me in check and boost my immune system year round. You might be surprised what made the list! Read on!

Is there anything better than slices of eggplant drizzled with olive oil, broiled to perfection, then blended together with lemon/tahini/garlic to create a creamy and decadent dip?…

Didn’t think so. And did I mention that it’s naturally vegan and gluten free? ๐Ÿ† ๐Ÿ…

If I had known how easy this baba ganoush recipe from Minimalist Baker was to make, I would’ve been making it like ten years ago. Of all the weird places for me to try baba ganoush for the first time was in a little Mediterranean cafe in Shanghai, China. If you’ve never had it, it’s basically like an amped up, tangier, more exotic version of hummus in my opinion.

And for those of you that think you have to grill the eggplant first or do some extensive prepping – you don’t. This recipe is seriously easy. It doesn’t require a ton of ingredients. Once the eggplant is broiled, all you have to do is toss everything into the blender. And bam! You’ve got a delicious snack that also contains vitamins & nutrients not only from the eggplant, but the lemon juice, parsley, garlic, and those healthy fats from the tahini and olive oil. Yes, yes and yassss ๐Ÿ‘…
