As a vegan, sometimes I find myself missing certain foods I enjoyed before I went completely plant-based. Foods like barbecue, pot roast, baked brie, and smoked salmon. These are foods that are difficult to veganize, although vegan barbecue is becoming a big trend. If you live in a vegan friendly city, then the plant-based options are endless. For example, the last time I visited Austin I went to the local grocery store and lo and behold I came across Vegan Smoked Salmon by a company called Sophie’s Kitchen.

I snatched the package from the fridge then raced around the store to add vegan cream cheese and gluten free bagels to my shopping cart, plus some red onion and tomato. I knew exactly what I wanted. When I found out that Edinburg – the town I live near in South Texas – was going to have a FridaFest, I immediately went into celebratory dance mode πŸ’ƒ I LOVE Frida Kahlo and I have a feeling that I will end up being a lot like her – living somewhere warm in a bright blue house with lots of animals, an artsy husband, and wearing colorful clothing and woven braids in my hair not caring what anyone thinks. I’m totally okay with that πŸ‘

Locals artists and vendors in the Rio Grande Valley were out in full force this past Saturday to celebrate the life and work of this very talented and interesting woman. Of course, of the three days a year the Valley actually gets rain, this had to be one of them β˜”οΈ Luckily, it didn’t scare anyone inside and I actually remembered to bring my umbrella for the first time in my life. I basically stepped into my second version of heaven (the first version is me being surrounded by every animal that ever lived 🐯); everywhere I looked there were colorful items dedicated to Frida.

My second favorite thing about FridaFest is that it supported local businesses and artists, and enabled them to share their talents. Here are some of the cool items I came across before the weather prevented me from snapping more photos!

It’s no secret that I love turmeric. I use it in my Cheesy Veggie Tofu Scramble, Turmeric Persimmon Nice Cream, my go-to Cheese Sauce, Fully Loaded Vegan Mac n’ Cheez, and even a Turmeric Face & Tooth Mask. It’s such a powerful antioxidant that consuming turmeric on a daily basis can aide the recovery of brain function and neurodegenerative diseases like Parkinson’s and Alzheimer’s, lower blood sugar, curb depression, prevent heart disease, and prevent & treat cancer. No wonder it’s known as “Holy Powder” πŸ™

Enter Golden Turmeric Milk. This creamy yellow liquid is a great way to incorporate turmeric into your day, especially if you like warm, cozy drinks β˜•οΈπŸ΅

I actually posted a slightly embarrassing recipe for Turmeric Milk over two years ago. It was one of my first recipes, when I was still sometimes using my phone to take photos for the blog! Life Lessons of a Dog Foster

I’m pretty sure I’ve lost count of all the dogs I’ve fostered over the past 8-ish years. Not to say that I don’t remember each and every one of them, and have pictures of each and every one of them. But there’s been so many sweet dogs in my life, and fostering becomes a delicate balance of wanting to both remember and forget.

For me, fostering dogs means giving my entire heart to care for each animal as though I’m keeping them forever, and then having my heart ripped to shreds when they are adopted because it feels like I’m losing my child. But that’s what being a foster parent is. Any kind of foster parent. It’s taught me about letting go and not being afraid to have to go through the whole wonderful/painful process all over again for another dog in need.

With each dog there are snuggles to be had, potty accidents to be cleaned up, injuries to be tended, and countless kisses. Like, so many kisses 😘 Good times, great times, rough times – they’re all worth it. Below are just a few of my special foster babies and the life lessons they have taught me.

Chocolate Chip Cookie Cake

You know it’s gonna be a good cake when it’s the same exact color as your wooden table πŸ‘ŒπŸ˜‚

But really, it’s got those crispy brown edges, caramel color, chocolate chips, and a perfect rise. These are all things you can see, but how does it taste you ask? Well, it’s got that nice moist cakey flavor, bursts of dark chocolate, and tastes amazing with a cold glass of coconut milk. And did I mention this cake is vegan, gluten free, and contains nutrient dense ingredients? Yep, it does 😘

I realize summer is in full swing and that means 90+ degree weather for most people and the last thing you wanna do is turn on the oven and make your house feel like the depths of hell, but trust me, this cake is totally worth it.
