Turmeric Persimmon Nice Cream

Summer is just around the corner! Unless you live in South Texas like me, in which case, it’s summer year round πŸ”₯

But I’m okay with that because it means it’s always nice cream weather. I’m still going strong 2+ years into my obsession with banana nice cream and all it’s versatility/deliciousness. I used to make chocolate peanut butter nice cream all the time and I still love it, but lately I’ve been coming up with new flavors 🍌🍨

Enter Turmeric Persimmon Nice Cream. There’s something about persimmon that kicks up the nice cream game like a million notches. Persimmon adds natural sweetness, a gorgeous bright orange color, and a creaminess that I can’t even explain but it’s amazing. Bananas are one of nature’s most perfect foods and lends more natural sweetness as the creamy base for this recipe. Finally, ground turmeric balances out all the sweetness from the persimmon and banana, adds to the vibrant color, and contributes antioxidants and other healing properties.

Blend this dish up in just a few minutes, then top with coconut flakes, fresh fruit, and coconut whipped cream. I love having this Turmeric Persimmon Nice Cream for lunch, a snack, dessert – I’ve even had it for breakfast! Aside from being sweet and creamy and A++ all around, it gives you a ton of energy to go about your day.

Vegan Vanilla Whipped Cream

To all the whipped cream lovers out there, no need to ever consume dairy whipped again or buy super expensive vegan whipped cream at a health foods store! Whipped cream made from coconut milk in a can has solved all these problems and more. Plus, I find it to be even more delicious than dairy whipped cream, which is so basic now πŸ’

I mean, why consume a saturated fat-filled product made from a milk designed for calves, when you can eat healthy fats from coconuts and get flavor + nutrients? It’s a no brainer to me!

Watch the video below for the crazy simple recipe and then slather your homemade whipped cream on anything and everything you want. I’ve used it in the morning as a topping on oatmeal, chocolate chia seed pudding, and even coffee. I’ve also used it to top baked goods, banana nice cream, and even my black teas β˜•οΈ Basically, it’s amazing on everything!

Once you make this vegan vanilla whipped cream, you’ll always want to have a fresh batch in your fridge and you won’t want to go back to regular ‘ol dairy.

I’ve said it before and I’ll say it again, I cannot skip breakfast! As soon as I wake up in the morning, I stumble into the kitchen and begin making my brekkies, because I cannot function or talk to other humans until I eat food and drink coffee πŸ˜©β˜•οΈ

For me, it’s all about the carbs. The more healthy carbs I consume in the morning, the more energy I have and the less hungry I am before lunch. That’s what makes this oatmeal and potato combo the perfect breakfast, plus it’s easy to make and goes perfect with a foamy vegan latte. Yum!!

Just imagine… organic old-fashioned oats topped with butter, brown sugar, coconut flakes and berries, then paired with crispy cubes of red potatoes sauteed in olive oil and seasoned with onion and some cheesy nutritional yeast. I like the balance of sweet and savory because you get the best of worlds!

German Sausage & Potato Skillet

Welcome to the final recipe of my RawSpiceBar recipe series! I may have saved the best for last, and I’m not saying that because it’s the recipe I created! If you’ve read the other recipes, you’ll remember one came from RawSpiceBar, one I modified from another food blogger and this one is created by moi! Looking at these photos right now as I work on this post is making me oh so hungry. I’m at the library eating donuts (true story) but I would much rather be eating this German Sausage & Potato Skillet! 🍽

This was my favorite RawSpiceBar combo -caraway, fennel and anise – and it went perfectly with the kielbasa sausage, smoky potatoes and crispy onions. This recipe is filling enough to be the main dish but not so overwhelming that it can’t be a side dish. It’s hearty and flavorful and super easy to whip up. It may be one of the easiest recipes I’ve ever posted. Check it out!

Cozying Up in Austin for the Holidays

During the Christmas/Hannukkah/New Year’s holidays I spent two weeks in Austin doing what I do best – house & pet sitting πŸ‘πŸ•

Well, it’s not that difficult really, just super fun and you get to hang out with fur babies all day! I also got to spend lots of time doing my favorite things, including plenty of photography for my blog. The days in Austin leading up to my trip were super cold, so I was worried I was in for a chilly time, but upon my arrival the weather warmed up and I got to enjoy some very beautiful days.

I decided to write about my time spent in Austin over the holidays and post my favorite photos from the experience. I hope you enjoy it!
