I’ve said it before and I’ll say it again, I cannot skip breakfast! As soon as I wake up in the morning, I stumble into the kitchen and begin making my brekkies, because I cannot function or talk to other humans until I eat food and drink coffee πŸ˜©β˜•οΈ

For me, it’s all about the carbs. The more healthy carbs I consume in the morning, the more energy I have and the less hungry I am before lunch. That’s what makes this oatmeal and potato combo the perfect breakfast, plus it’s easy to make and goes perfect with a foamy vegan latte. Yum!!

Just imagine… organic old-fashioned oats topped with butter, brown sugar, coconut flakes and berries, then paired with crispy cubes of red potatoes sauteed in olive oil and seasoned with onion and some cheesy nutritional yeast. I like the balance of sweet and savory because you get the best of worlds!

vegan home fries

Home Fries Ingredients:

  • 1 medium sized red potato, cubed into bite-sized pieces
  • a thin slice of onion (white, yellow and red all taste good!), minced
  • 1-2 tbsp extra virgin olive oil
  • a splash of apple cider vinegar (or a little lemon juice)
  • salt, pepper, garlic powder to taste
  • optional: a splash of Bragg’s amino acids
  • topping: nutritional yeast

4 Easy Steps:

  1. Heat a little olive oil in a pan on medium heat. Add potatoes, cover, and let saute for about five minutes.
  2. Push the potatoes to the outer parts of the pan and drizzle some more olive oil in the center. Add minced onion and saute until they start to brown.
  3. Stir the onion and potatoes together. Add apple cider vinegar and Bragg’s amino acids, plus water as needed if the mixture gets dry. Cover and cook another 5-7 minutes.
  4. Once the potatoes are brown and crispy, season with a little salt and pepper and garlic powder. Serve and top with nutritional yeast.

Brown Sugar Oatmeal Ingredients:

  • 1/2 cup water
  • 1/4 cup organic, old fashioned oats
  • 1 tsp vegan butter
  • brown sugar (I like Wholesome’s Dark Brown Sugar, it has a nice maple flavor)
  • coconut flakes
  • ground cinnamon
  • berries

3 Easy Steps:

  1. Bring water to a boil. Add the dry oats and turn heat down to low.
  2. Let the oats simmer, stirring occasionally, about 10 minutes or until all the water is absorbed.
  3. Transfer to bowl and stir in vegan butter, about 1-2 tsp of brown sugar (or coconut sugar), and a couple sprinkles of cinnamon. Top with coconut flakes and berries. Enjoy!

    Haha! Made me laugh. Reminds me of my father. He says, “Man when I wake up in the morning I feel FAMISHED! When my feet hit the floor I’m looking for food buddy”. Looks like a great breakfast.
