This post has been a long time coming! I first stayed at Tiny Texas Houses in Luling for my birthday in May… last year. I took hundreds of pictures because it was so amazing and it took forever to narrow them down to the best ones, which still left me with over a hundred photos to edit. Definitely worth it though. I ended up going back again this past fall (another post because I can’t even think about editing more photos right now!) and after reading this post, you’ll probably want to visit, too.

What exactly is Tiny Texas Houses? It’s a company founded by Brad Kittel in Luling, Texas (which is a little over an hour southeast of Austin) that uses salvaged housing materials to build custom, hand-crafted tiny houses. These materials are 100% American, toxin free, and more environmentally friendly. Plus, Brad makes adorable and unique houses that are almost unreal!

Best part is, if you aren’t in the market to buy a tiny house, you can still rent one through Air BnB and enjoy not only the house itself, but the beautiful natural surroundings of Luling. What follows are some photos to whet your appetite… for delicious tiny houses! 🏘

I’ve said it before and I’ll say it again, I cannot skip breakfast! As soon as I wake up in the morning, I stumble into the kitchen and begin making my brekkies, because I cannot function or talk to other humans until I eat food and drink coffee πŸ˜©β˜•οΈ

For me, it’s all about the carbs. The more healthy carbs I consume in the morning, the more energy I have and the less hungry I am before lunch. That’s what makes this oatmeal and potato combo the perfect breakfast, plus it’s easy to make and goes perfect with a foamy vegan latte. Yum!!

Just imagine… organic old-fashioned oats topped with butter, brown sugar, coconut flakes and berries, then paired with crispy cubes of red potatoes sauteed in olive oil and seasoned with onion and some cheesy nutritional yeast. I like the balance of sweet and savory because you get the best of worlds!

Friends for Life Animal Shelter in Houston

Look at these babiessss! Aren’t they gorgeous? I met them a few months ago at a Friends for Life adoption event in Houston. Friends for Life is one of only two LEED-certified no kill animal shelters in Texas. That means they are a certified green building 🌱 You definitely get a different feel when you walk through their doors, and I don’t just mean aesthetics. First of all, it’s quiet! Granted, the main part of the shelter open to the public only has about eight to ten dogs, but normally shelters are extremely loud and chaotic. Friends for Life, on the other hand, has a calm and peaceful vibe that is nice for visitors, but even nicer for the animals that live there.

I visited twice in one week, if that tells you anything! Check out the adorable cats and dogs that I met during my visits and all the wonderful facts I learned about this progressive no kill shelter πŸˆπŸ•

German Sausage & Potato Skillet

Welcome to the final recipe of my RawSpiceBar recipe series! I may have saved the best for last, and I’m not saying that because it’s the recipe I created! If you’ve read the other recipes, you’ll remember one came from RawSpiceBar, one I modified from another food blogger and this one is created by moi! Looking at these photos right now as I work on this post is making me oh so hungry. I’m at the library eating donuts (true story) but I would much rather be eating this German Sausage & Potato Skillet! 🍽

This was my favorite RawSpiceBar combo -caraway, fennel and anise – and it went perfectly with the kielbasa sausage, smoky potatoes and crispy onions. This recipe is filling enough to be the main dish but not so overwhelming that it can’t be a side dish. It’s hearty and flavorful and super easy to whip up. It may be one of the easiest recipes I’ve ever posted. Check it out!

Cozying Up in Austin for the Holidays

During the Christmas/Hannukkah/New Year’s holidays I spent two weeks in Austin doing what I do best – house & pet sitting πŸ‘πŸ•

Well, it’s not that difficult really, just super fun and you get to hang out with fur babies all day! I also got to spend lots of time doing my favorite things, including plenty of photography for my blog. The days in Austin leading up to my trip were super cold, so I was worried I was in for a chilly time, but upon my arrival the weather warmed up and I got to enjoy some very beautiful days.

I decided to write about my time spent in Austin over the holidays and post my favorite photos from the experience. I hope you enjoy it!
