Gluten Free Veggie Pasta Salad

All right, I know it’s almost Thanksgiving and for many parts of the world it’s already cold enough outside to be wearing heavy jackets and mittens, but here in southeast Texas the weather is kind of amazing 🌞 It’s been warm and mild during the day and chilly at night, but not so chilly that I’m freezing my vegan butt off. So even though pasta salad feels more like a spring or summer dish, I’m gonna put it out there anyway because this pasta salad is really delicious and healthy and filling.

For starters, this pasta is gluten free and contains minimal ingredients. I love that. Then it gets tossed in a tangy dressing and topped with tons of delicious veggies. I even added some pre-seasoned, pre-cooked tofu crumbles for added texture and protein πŸ™Œ

This Gluten Free Pasta Salad is perfect for lunch with friends or for making a huge batch to provide you with quick on-the-go meals for the rest of the week. It’s an easy way to get those veggies in πŸ…πŸ‹ if that’s something that’s a struggle for you 😜

Pit Bull Awareness Day Festival

A festival dedicated to pit bulls? Those blocky headed, big tongued, wiggly butted, wet nosed beasts that get a rap but are really just as sweet and good natured as every other dog on the planet? Um, yes, I’ll be there!

The 8th Annual Pit Bull Awareness Day Festival happened in Austin, Texas on Sunday, October 23rd. It was held by Love-a-Bull, a nonprofit organization dedicated to rescuing pit bulls in need and finding them good homes. There were lots of vendors, a silent auction, food trucks, and of course the most adorable pit bulls known to man 🐢

I got there just as the pittie parade kicked things off with a dog walk around the park. So many pibbles dressed up and wiggling their butts! Then I got to explore all the rescue groups, enjoy an intro by local DJ Deb of 101x who is a dog enthusiast, watch some very well behaved dogs demonstrate their skills on the agility course, look at the local goods that vendors handcrafted, and watch pit bulls roll around in the kiddie pools set up around the park.

And everything was to benefit rescue pits! It sort of felt like heaven being surrounded by these fun loving dogs. Here are my favorite photos from the day πŸ“·

I was a fan of hot dogs briefly during my childhood and then they became increasingly weird and icky to me, especially once I found out what’s actually in hot dogs, but we won’t go there in this post 😩

This post is all about Doggie Style, the new vegan food truck in Austin, Texas that serves what else – vegan hot dogs!!! My non-vegan boyfriend and I decided to check it out (i.e. I forced him to come with me) but I had a feeling he would like this place because he’s very open minded about vegan food and is a fan of pretty much all things vegan 😘

Kid Friendly Vegan Goulash

Before I made this recipe, I had heard of goulash before but honestly had no clue what it actually was. It wasn’t until my roommate at the time made a non-vegan version of it and told me how easy it was, that I decided to do a little investigating. Traditional goulash originates from Hungary and consists of a soup or stew with meat and vegetables, seasoned with paprika and other spices.

American goulash, on the other hand, is more of a spaghettios-on-crack-type-situation. It usually includes elbow macaroni, ground beef, onions & garlic, tomato sauce and the option of cheese. My roommate gave me the recipe for the latter and it sounded super easy to veganize, so I gave it a try. This vegan goulash is a very savory, filling comfort food with plant based protein and only takes about half an hour to make a huge pot. Kids will love it because it’s a simple, tasty dish! Oh, and it’s gluten free too!

Beaumont Botanical Gardens

I spent most afternoons this past summer walking barefoot through the botanical gardens in Beaumont, Texas πŸ‘£πŸŒΊπŸπŸŒ΄ It was never crowded and many times I was the only person there. The botanical gardens are tucked away in the expansive Tyrrell Park in southern Beaumont. The outside gardens, pictured here, are free and open from daylight till dark every day.

What are some perks of traversing these lovely grounds? For starters, there are wild bunnies hopping around πŸ‡πŸ° I’ve also seen a raccoon on the trail as well as a pretty ginormous snake 🐍 There’s lots of cute lizards and butterflies and bees, and of course brightly colored flowers and fragrant roses.

I brought my camera along for my last couple of visits to the Beaumont Botanical Gardens. Here are my favorite pictures πŸ“·
