Eeeeee, look at those perfect little sugar plum circles 🔴🔴🔴 This recipe really encompasses sugar, spice, and everything nice, especially that last part, because it’s vegan & gluten free 😘

I meant to post this recipe before spring popped up because it totally has cozy winter vibes happening, but cake is a year-round thing, so I figure there’s no time like the present. This would be a great rainy day treat, even in the summer.

I found sugar plums at Central Market at the end of this past summer and conjured up images of fairies and princesses and the Nutcracker and all that jazz, and knew I had to make something tasty. I decided to make a simpler, healthier version of sugar plum cake. It’s moist, not overly sweet, and pairs great with coffee 🍰 ☕️

Okay friends, this is not a baked potato in the traditional sense. There is no microwave involved or poking holes in the potato with a fork. I know. I’m such a liar 🙈 The main reason for the name of this recipe is the toppings associated with a traditional baked potato.

This dish is a delicious mess of tangy potatoes, melted cheese, crunchy chives, bacon, mushrooms, and instead of sour cream – my ultra amazing Magic Sauce. This recipe is so filling that I’ve eaten it by itself many times. However, it goes great with steamed broccoli and fresh lemon, salad, or whatever else your heart desires 💖

Wintertime at Rowdy Girl Sanctuary

This is how I like my chicken ☝️ alive and showered with love 😘🐔I had such a great time during My Visit to Rowdy Girl Sanctuary back in September, that I just had to come back for more! Renee and Tommy are working so hard for the dozens of animals that would otherwise be slaughtered for food, and since I don’t live super far from their sanctuary in southeast Texas, I signed up to be a volunteer 🙌🎉 I couldn’t wait to see to see all my furry friends again and meet the newly rescued residents, including 2 pigs 🐷 and several cows from Florida 🐮

During this most recent trip to Rowdy Girl, Renee described to me all the preparations her and Tommy are making to ensure that the animals stay safe and comfortable this winter. Texas winters aren’t exactly brutal, but with immensely unpredictable weather, and all that rain coming from the coast, it can cause very treacherous grounds for the animals 🌊❄️ The pathways get so muddy that the cows’ legs sink down several inches and that’s no fun 😞 especially when it’s meal time and they want to get their food!

This is the Rio Grande Valley of Texas. Oddly enough, there are no valleys here. It’s flat, lush land for miles and miles. I’ve spent the past week and a half traversing this southernmost region of Texas and I have to say – I love it. Maybe it’s all the palm trees, tropical flowers, sunshine, and friendly people, but there’s something about this area that captivates me. 🌴🌴 It’s made up mostly of small towns, many dotting the border of Mexico, so as a vegan coming down to visit I had no idea what to expect in terms of veg friendly food. But I was pleasantly surprised.

This may be the most beautiful recipe I’ve shot yet! And it’s not because of my mad photography skills – all the credit goes to the food and it’s natural beauty💄💅 Not to mention, this chia seed pudding allows me to consume chocolate in breakfast form. Now I just gotta work on lunch and dinner.

I’ve made this recipe a handful of times since photographing it and I love it because it’s so simple to make. Simple is good since I’m one of those people that wakes up and refuses to talk or make contact with anyone until I’ve had coffee and breakfast + a substantial amount of time to process the fact that it’s morning and I’m awake. So basically, I’m delightful. 👿
