I’m quite aware that chemicals lurk everywhere in our daily lives, whether we want them to or not. We live in a day and age where our most commonly used products contain a plethora of man made chemicals. What’s even worse is that many of these chemicals are toxic and not regulated by the agencies that are supposed to keep us safe, and certainly not by the companies themselves. The good news is, there’s a simple solution. But first, here are a few facts I learned from watching The Human Experiment, a documentary that explores the chemicals we use in our everyday lives.

1. In 1999, 1 in 500 kids had autism. Today it’s 1 in 88.

Other increases over the past 45 years:
Childhood brain cancer 38%
Asthma 80%
Leukemia in children 74%
Early onset puberty 55%
ADHD 53%
Genital deformities in baby boys 122%
Life threatening birth defects >100%

Not to mention, breast cancer rates have gone up more than 30% in women and men since 1975. It’s increasingly occurring in very young women who have no family history of cancer, don’t smoke, drink, or eat meat, and have active lifestyles.

Creamy Vegan Coffee Milk

The weird winter weather of southeast Texas is here to stay, well, at least through February. It includes frigid nights mixed with sunny warm days and bouts of rain ❄️☀️☔️ I’ve been craving warm foods like soup, sweet potato fries, gnocchi, and hot tea. Lately I’ve been buying vegan ramen from the health foods store and adding in mushrooms, cabbage, broccoli, and tofu. It’s so delicious 🍜👅

But for those random winter days that end up feeling more like spring (my Texas peeps know ✊) here’s a frothy, creamy, java induced recipe that is served cold and is the closest thing to heaven 😇

The Shelter Dogs of Beaumont, Texas

You can tell just by looking at this dog that she’s had a rough life – you can see her ribs, the patchy spots of missing fur, she needs a bath, and if you look closely, you can see that she recently had puppies. Yet when I met this dog at the Beaumont Animal Shelter, she was calm and sweet and had such hopeful eyes. I’m not sure what happened to her. In an ideal world, she found a loving home that spoils her and loves her more than anything. But after spending the past couple of months in Beaumont, Texas and volunteering at the shelter, I’m obliged to think happy endings for these dogs are far and few between.

Coming here from Austin, Texas after working at the largest no-kill shelter in the U.S., it’s been pretty traumatic volunteering at a small shelter that still imposes what I consider outdated standards and protocol. I know they have good intentions and want to help the animals that come through their shelter, but they are also struggling in a region that isn’t as open minded and modern in their thinking of how pets and animals should be treated. I first visited Beaumont’s city shelter on my birthday back in May of this year. Here are a few of the dogs I saw —

Okay friends, this is not a baked potato in the traditional sense. There is no microwave involved or poking holes in the potato with a fork. I know. I’m such a liar 🙈 The main reason for the name of this recipe is the toppings associated with a traditional baked potato.

This dish is a delicious mess of tangy potatoes, melted cheese, crunchy chives, bacon, mushrooms, and instead of sour cream – my ultra amazing Magic Sauce. This recipe is so filling that I’ve eaten it by itself many times. However, it goes great with steamed broccoli and fresh lemon, salad, or whatever else your heart desires 💖

Wintertime at Rowdy Girl Sanctuary

This is how I like my chicken ☝️ alive and showered with love 😘🐔I had such a great time during My Visit to Rowdy Girl Sanctuary back in September, that I just had to come back for more! Renee and Tommy are working so hard for the dozens of animals that would otherwise be slaughtered for food, and since I don’t live super far from their sanctuary in southeast Texas, I signed up to be a volunteer 🙌🎉 I couldn’t wait to see to see all my furry friends again and meet the newly rescued residents, including 2 pigs 🐷 and several cows from Florida 🐮

During this most recent trip to Rowdy Girl, Renee described to me all the preparations her and Tommy are making to ensure that the animals stay safe and comfortable this winter. Texas winters aren’t exactly brutal, but with immensely unpredictable weather, and all that rain coming from the coast, it can cause very treacherous grounds for the animals 🌊❄️ The pathways get so muddy that the cows’ legs sink down several inches and that’s no fun 😞 especially when it’s meal time and they want to get their food!
