Southeast Texas: The Golden Triangle and Galveston

southeast texas: the golden triangle and beaumont

southeast texas road trip

Southeast Texas is a true melting pot of people, culture, and landscape. You’ve got Houston – the largest city in the south – on the left, the beach on the right, and everything in between – piney woods, countryside, hurricanes, Louisiana influence, old southern customs, chemical plants & refineries, a growing art scene, and so much more!

๐ŸŒŠ๐ŸŒดโ˜€๏ธโ˜”๏ธ๐ŸŽท๐Ÿก๐Ÿšข๐ŸŒฒ

The Golden Triangle, as the local residents call it, consists of Beaumont, Port Arthur, and Orange. The “golden” refers to the wealth that came from the Spindletop oil strike near Beaumont in 1901. Not too much further is the beach town of Galveston, which was first settled by Europeans in 1816 and is famous for the devastating hurricane of 1900.

There’s so much to do and see in this often overlooked part of Texas, and what follows are some of my favorite adventures…

The Shelter Dogs of Beaumont, Texas

January 4, 2016 by Jillian Leave a Comment

the shelter dogs of beaumont, tx

You can tell just by looking at this dog that she’s had a rough life – you can see her ribs, the patchy spots of missing fur, she needs a bath, and if you look closely, you can see that she recently had puppies. Yet when I met this dog at the Beaumont Animal Shelter, she was calm and sweet and had such hopeful eyes. I’m not sure what happened to her. In an ideal world, she found a loving home that spoils her and loves her more than anything. But after spending the past couple of months in Beaumont, Texas and volunteering at the shelter, I’m obliged to think happy endings for these dogs are far and few between.

Coming here from Austin, Texas after working at the largest no-kill shelter in the U.S., it’s been pretty traumatic volunteering at a small shelter that still imposes what I consider outdated standards and protocol. I know they have good intentions and want to help the animals that come through their shelter, but they are also struggling in a region that isn’t as open minded and modern in their thinking of how pets and animals should be treated. I first visited Beaumont’s city shelter on my birthday back in May of this year. Here are a few of the dogs I saw —

Wintertime at Rowdy Girl Sanctuary

winterizing rowdy girl

This is how I like my chickenย โ˜๏ธ alive and showered with love ๐Ÿ˜˜๐Ÿ”I had such a great time during My Visit to Rowdy Girl Sanctuary back in September, that I just had to come back for more! Renee and Tommy are working so hard for the dozens of animals that would otherwise be slaughtered for food, and since I don’t live super far from their sanctuary in southeast Texas, I signed up to be a volunteer ๐Ÿ™Œ๐ŸŽ‰ I couldn’t wait to see to see all my furry friends again and meet the newly rescued residents, including 2 pigs ๐Ÿท and several cows from Florida ๐Ÿฎ

During this most recent trip to Rowdy Girl, Renee described to me all the preparations her and Tommy are making to ensure that the animals stay safe and comfortable this winter. Texas winters aren’t exactly brutal, but with immensely unpredictable weather, and all that rain coming from the coast, it can cause very treacherous grounds for the animals ๐ŸŒŠโ„๏ธ The pathways get so muddy that the cows’ legs sink down several inches and that’s no fun ๐Ÿ˜ž especially when it’s meal time and they want to get their food!

La Sal del Rey & Raymondville, Texas

la sal del rey & raymondville, texas

raymondville, texas

It’s raining yet again down here in southeast Texas and I still don’t have an umbrella for some reason โ˜”๏ธโ˜”๏ธ Maybe because trying to frantically open one inside my car or the doorway of a building as rain splashes down around me is like trying to solve a Chinese puzzle box. It’s more trouble than it’s worth in my world, and I’d rather be rained on for a few seconds than open an umbrella ๐Ÿ’ฆ๐Ÿ˜“๐Ÿ’ง

Umbrella or not, it’s really making me wish I was back in the Rio Grande Valley, where it was bright and sunny all day everyday like a tropical heaven โ˜€๏ธ๐ŸŒด I looooove this southernmost region of Texas almost as much as I love chocolate and puppies. I already wrote about being Vegan in the Rio Grande Valley and Exploring the Rio Grande Valley, and I have one more post in this three part series. Here are my favorite photos from my adventures to La Sal del Rey and Raymondville, Texas. [Read more…]

Quinoa with Sauteed Veggies & Gravy

I think I can say it’s officially fall in Texas, which means I can use all autumn related emojis… ๐Ÿ‚ย ๐Ÿย ๐Ÿƒย โ˜•๏ธย ๐ŸŽƒ๐ŸŽ

While other states have already gotten snow and freezing temps, I’m down in Texas like… it’s November ๐Ÿ˜Žย ๐Ÿ‘™๐Ÿน

Here in the Lone Star State we like pumpkin spiced everything & cozy sweaters just like the rest of you, and the thought that maybe-just-maybe we’ll actually get to use our fireplaces at least once this year. It may have hit 80 degrees yesterday where I live, but that won’t stop me from making delicious, seasonal dishes that make me feel like we have autumn for more than two seconds in Texas.

Cue today’s post โ˜๏ธ because how fall/autumn does this dish look?! Quinoa with Sauteed Veggies and Gravy – I mean, how often do vegans get to eat gravy, am I right? I created this recipe after buying a box of Pacific Mushroom Gravy for the first time and then realized I had no idea what to use it for ๐Ÿ’” Then I came up with this yummy, filling (not to mention healthy) entree. It consists of fluffy quinoa with sauteed garlic, onions, squash & mushrooms, and all simmered in savory mushroom gravy ๐Ÿ˜ย ๐Ÿ‘Œ
