For the past several weeks I’ve basically been living off sweet potato fries and banana nice cream and I’m totally okay with that. Bananas and sweet potatoes are two of the most nutritious foods known to man 🍌 🍠 (and the fact that there’s even a sweet potato emoji pretty much sums it up, right?) and they’re dang delicious.
What’s even more applause worthy is that these sweet potato fries are filling enough to be an entire meal 👏 I make them for lunch or dinner and they are totally satisfying. I mean, crunchy and savory wedges with a hint of garlic and cumin, dipped in creamy, tangy magic sauce? 😍 Heart exploding.
I hope I never ever get tired of these fries because they should really be named Awesome Amazing Dynamite Sweet Potato Fries with Magically Powered Magic Sauce 💥 💥 💥 but that was too long for this blog post…
Here is all you need to makes 2 servings of these mouth watering Sweet Potato Fries with Magic Sauce:
- 2 large sweet potatoes, peeled and rinsed
- extra virgin olive oil
- salt & pepper
- garlic powder
- ground cumin
- vegan mayo
- lemon juice
- nutritional yeast
Cut each sweet potato lengthwise, then cut each half into 6 wedges. There’s two ways to finish this recipe. You can combine your olive oil and seasonings in a bowl, stir, and coat the wedges…
OR
The way I prefer is to pour a couple tablespoons of olive oil on a baking sheet and spread it around using one of the sweet potato wedges. Lay the wedges on the sheet and use your finger or a brush to coat the tops of the wedges with a little more oil. Then sprinkle on salt, pepper, garlic powder, and cumin. I just eyeball it based on how seasoned I like my fries. I find it’s easier this way because trying to evenly coat them in the bowl was difficult for me and waaaay messier.
But if you go the bowl route, combine 1 tbsp of olive oil, 1/2 teaspoon cumin, 1/2 tsp of salt, 1/2 tsp of garlic powder, and 1/4 tsp of black pepper. Add the sweet potato wedges and coat them evenly. Place in one layer onto a baking sheet.
Bake in the oven at 400 degrees for 15 minutes. At this point, take out of the oven and use a fork to flip the wedges over. Sprinkle a little more of the seasonings and put back in the oven for another 15-20 minutes, until the edges are nice and crispy.
While the fries finish baking, you can prepare your magic sauce. In a small bowl, combine a few tablespoons of vegan mayo, a few dashes of Cholula sauce, a couple squeezes of lemon juice, a dash of water, and 1-2 tsp of nutritional yeast. You can tell this is very technical 😜 Stir or whisk until smooth.
These fries are best served fresh, but them cool for a couple of minutes first. I served mine with a salad made of red kale, cucumber, seasonings, and lemon juice. Or use them as a side dish with veggie burgers. If you don’t think magic sauce is as magical as I do, you can use whatever kind of sauce you like. They taste good with ketchup, vegan ranch, or even dijon mustard.
