In this case, it’s okay because Miyoko Schinner of Miyoko’s Kitchen uses nuts to make delicious artisan vegan cheeses. When life gives you nuts, make cheese πŸ˜›

Even though I got to sample some of Miyoko’s cheeses at the Vida Vegan Con Bazaar in Austin last summer, I wanted to dig into my very own wheel of vegan cheese and if I happened to eat it all in one sitting, no one would know or judge me πŸ™ˆ

Healing Tropical Turmeric Smoothie

This smoothie is my everything ✨

Not only does it contain plant based healing properties, but it’s refreshing and delicious, and the beautiful bright orange color doesn’t hurt either! Smoothies have become part of my daily diet and I feel like 5 million percent better than my pre-smoothie life. Humans are so used to eating processed foods, even the healthier versions of them, that sometimes eating basic raw fruits & vegetables can be a daily struggle. I know that even if I slip up and eat a whole bag of potato chips or something fried or containing gluten, I feel better knowing that smoothies got my back and I don’t have to have a meltdown because I ruined my day with junk food.

Enter the Healing Tropical Turmeric Smoothie. A coconut based smoothie with healing turmeric and ginger, banana and peaches for natural sweetness, and carrots for fiber and a pop of color.

Check out my very first recipe video for this easy to make smoothie! I’m sure there are tech savvy 10 year olds out there that could create a better video than this, but it was super fun to make and I’m sure my video skills will improve from here on out. Let me know what you think!

Okay friends, this is not a baked potato in the traditional sense. There is no microwave involved or poking holes in the potato with a fork. I know. I’m such a liarΒ πŸ™ˆ The main reason for the name of this recipe is the toppings associated with a traditional baked potato.

This dish is a delicious mess of tangy potatoes, melted cheese, crunchy chives, bacon, mushrooms, and instead of sour cream – my ultra amazing Magic Sauce. This recipe is so filling that I’ve eaten it by itself many times. However, it goes great with steamed broccoli and fresh lemon, salad, or whatever else your heart desires πŸ’–

This is the Rio Grande Valley of Texas. Oddly enough, there are no valleys here. It’s flat, lush land for miles and miles. I’ve spent the past week and a half traversing this southernmost region of Texas and I have to say – I love it. Maybe it’s all the palm trees, tropical flowers, sunshine, and friendly people, but there’s something about this area that captivates me. 🌴🌴 It’s made up mostly of small towns, many dotting the border of Mexico, so as a vegan coming down to visit I had no idea what to expect in terms of veg friendly food. But I was pleasantly surprised.

Can you handle how good this looks? I for one cannot. I must admit that real steak has never appealed to me, even in my meat eating days, but this cauliflower cheese steak gets me salivating like a hungry dog. I was never a humongous fan of cauliflower, but once I became vegan and realized how nutrient-dense and versatile it is (I mean, Creamy Vegan Cauliflower Alfredo Sauce for crying out loud, not to mention it makes a great pizza crust) I actually get cravings for it on a regular basis. Then there’s cheese… Oh sorry, did I need to go on? Yes, there’s super yummy Daiya Cheddar Cheese shreds all over this dish. And scallions. And a few seasonings. Wham bam boom you’re done!

Although I do create the majority of my own recipes, I can’t entirely take credit for this one. For my birthday last month my friend Salina gave me a beautiful vegetarian cookbook called The Forest Feast. Many of the recipes are vegan as well, and Salina knew it would be easy for me to veganize the recipes that contain dairy in them. She was right!
