Protein Packed Breakfast Tostadas

I’m one of those people that must eat a hearty breakfast with hot coffee every single morning NO. MATTER. WHAT. ☕️ But as as a vegan, sometimes it can feel like my breakfast choices are limited. I can only handle so much oatmeal. I can’t cook up eggs and bacon. I’m also gluten free, so pancakes and bagels and waffles can be tricky. What’s a vegan girl to do?…

Whip up some healthy breakfast tostadas filled with creamy refried black beans, crispy potatoes, sliced avocado, crunchy red onion, and hot sauce & vegan ranch of course! So much yes. I want them right now and it’s no where near breakfast time as I write this but it doesn’t matter because tostadas can be consumed any time of day ?

Tangy Summer Kale Salad

This oh so good summery salad is awesome for many reasons. Here’s a quick rundown: It’s easy to make, light but filling at the same time, full of tangy goodness, all plant based, AND the star of the show is a leafy green packed with antioxidants and fiber. Kale yeah!

I live so close to the beach and after trying to make it there all summer, I finally did last week ?☀️? The weather was perfect and since school is gearing back up, we basically had the beach to ourselves. Despite my best efforts at sunscreen, I still ended up getting burned really badly. Like, the front of me was so sunburned I had to sleep on my back for two days because it hurt so much ? Since then, I’ve been coating myself in coconut oil and aloe vera like there’s no tomorrow. I figure what goes into my body is just as important in my healing process, too. That’s where my Summery Kale Salad comes in. It’s full of fiber and antioxidants and good fats and detoxifying ingredients ?

Even though this recipe is enough for 2-3 people, nobody will judge you for eating it all in one sitting. That’s the great thing about salads! ?

Oh bright yellowy goodness ? ? (That would be homemade cashew cheese sauce y’all)

I came up with this recipe on the fly because I wanted something filling and easy to make that I could store in the fridge and eat for several days with zero effort to prepare. And so this cheesy Chicken & Veggie Quinoa Casserole was born ?

It’s got loads of protein coming from the Beyond Meat chicken strips and quinoa, good fats from the cashews, and anti-inflammatory properties in the turmeric. Plus, it’s utterly delicious and you will wolf it down faster than you can blink ? Not to mention, like all of my other recipes, it’s vegan and gluten free!

Chocolate Chip Banana Bread

Did you know that you don’t need eggs, butter, milk, or wheat flour to make delicious baked goods? If you’re vegan and/or gluten free you already know that, or maybe you aren’t either of those but you’re in the loop about these things ?

It’s a myth that you need wheat and dairy to create moist and tasty bread, cookies, cakes, basically everything ? ? ?

Today’s recipes is one of my favorites that I make often, and I like it because you can bend the recipe based on what ingredients you have on hand. It also works in muffin or scone form! This Chocolate Chip Banana Bread is full of hearty, plant based ingredients with lots of chocolate banana-y goodness that is moist with every single bite!

Simple Baba Ganoush

Is there anything better than slices of eggplant drizzled with olive oil, broiled to perfection, then blended together with lemon/tahini/garlic to create a creamy and decadent dip?…

Didn’t think so. And did I mention that it’s naturally vegan and gluten free? ? ?

If I had known how easy this baba ganoush recipe from Minimalist Baker was to make, I would’ve been making it like ten years ago. Of all the weird places for me to try baba ganoush for the first time was in a little Mediterranean cafe in Shanghai, China. If you’ve never had it, it’s basically like an amped up, tangier, more exotic version of hummus in my opinion.

And for those of you that think you have to grill the eggplant first or do some extensive prepping – you don’t. This recipe is seriously easy. It doesn’t require a ton of ingredients. Once the eggplant is broiled, all you have to do is toss everything into the blender. And bam! You’ve got a delicious snack that also contains vitamins & nutrients not only from the eggplant, but the lemon juice, parsley, garlic, and those healthy fats from the tahini and olive oil. Yes, yes and yassss ?
