Vegan Brownies with Peanut Butter Frosting

This incredibly easy recipe makes moist brownies and a creamy, thick frosting for a chocolate & peanut butter combo you will love!

Ingredients
  • For the brownies:
  • 2 cups unbleached all-purpose flour
  • 2 cups white sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup water
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 1 cup unsalted vegan butter softened to room temperature
  • 1 cup creamy peanut butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2-5 tablespoons non-dairy milk (add more milk if frosting is too thick)
Instructions
  1. For the brownies: Preheat the oven to 350 degrees.
  2. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt.
  3. Pour in water, vegetable oil and vanilla; mix until well blended.
  4. Spread evenly in a 9x13 inch baking pan.
  5. Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.
  6. For the frosting: Combine butter and peanut butter in a large bowl and use an electric mixer to beat until creamy and well-combined.
  7. With mixer on low-speed, gradually add powdered sugar (1/3 cup at a time) until completely combined. Be sure to scrape the sides and bottom of the bowl so all ingredients are well-combined.
  8. Stir in vanilla extract and salt.
  9. With mixer on low-speed, add milk and stir until well-combined. Gradually increase speed to high and beat for 30 seconds.
  10. Spread frosting onto completely cooled brownies.
