Key Lime Pie & Chocolate Peanut Butter Energy Balls

Serves: 12-15 balls each
- Key Lime Pie: ½ cup raw almonds
- ½ cup raw cashews
- 1.5 cups Medjool dates, pitted
- zest and juice from 3 key limes
- ½ cup unsweetened coconut flakes
- Chocolate Peanut Butter: 1 cup Medjool dates, pitted
- 3 tbsp peanut butter
- 1 tbsp chia seeds
- ⅔ cup rolled oats
- cocoa powder
- Key Lime Pie: Pulse the almonds and cashews in a food processor or blender until finely chopped.
- Add the dates, lime juice and zest. Pulse until the mixture clumps together.
- Use your hands to form into small balls. Roll each ball in coconut flakes.
- Store in airtight container in the fridge.
- Chocolate Peanut Butter: Pulse the dates in a food processor or blender until finely chopped.
- Add the peanut butter, chia seeds and rolled oats and pulse until combined and mixture clumps together.
- Use hands to form into small balls. Roll in cocoa powder.
- Store in airtight container in fridge.
