Creamy, blended sweet potato topped with melted vegan butter, cinnamon, dark chocolate chips, and puffy vegan marshmallows. Just as satisfying as an ice cream sundae but waaaaay healthier and cruelty free!

Serves: 1-2 servings
Ingredients
1 large sweet potato
2-3 tbsp of coconut sugar (or another natural sweetener like maple syrup)
dollop of vegan butter like Earth Balance
ground cinnamon
Dandie's Mini Marshmallows
semisweet chocolate chips
Instructions
Peel and rinse your sweet potato. Cut into cubes and add to a pot of boiling water. Turn down to low and cook until you can stick a fork through it, about 5-10 minutes.
Drain the cubes and blend them until smooth using a food processor or blender.
Add 2-3 tbsp of coconut sugar and mix well.
Pile the sweet potato mixture into your serving dish. Sprinkle vegan marshmallows and dark chocolate chips, and top with a small dollop of vegan butter and a lots of ground cinnamon.
