Sweet Potato Sundae

This will be my fourth recipe featuring sweet potatoes 🍠 As you can tell, I don’t like them at all πŸ˜‚

I have my savory Sweet Potato Fries with Magic Sauce which I eat on a weekly basis because they’re so amazing, and then there’s this divine Chocolate Sweet Potato Cake with Coconut Creme Fraiche situation going on. Today’s recipe is similar to one of my earliest recipes I ever posted on this website for Sweet Potato Pudding. It came to me after I got cute little sample bags of Dandies Marshmallows at the Vida Vegan Con Bazaar in Austin.

Creamy, blended sweet potato topped with melted vegan butter, cinnamon, dark chocolate chips, and puffy vegan marshmallows. Just as satisfying as an ice cream sundae 🍨 but waaaaay healthier and cruelty free!

Here are the ingredients you will need:

  • 1 large sweet potato
  • 2-3 tbsp of coconut sugar (or another natural sweetener like maple syrup)
  • dollop of vegan butter like Earth Balance
  • ground cinnamon
  • Dandie’s Mini Marshmallows
  • semisweet chocolate chips

Peel and rinse your sweet potato. Cut into cubes and add to a pot of boiling water. Turn down to low and cook until you can stick a fork through it, about 5-10 minutes.

Drain the cubes and blend them until smooth using a food processor or blender.

Add 2-3 tbsp of coconut sugar and mix well.

Pile the sweet potato mixture into your serving dish. Sprinkle vegan marshmallows and dark chocolate chips, and top with a small dollop of vegan butter and a lots of ground cinnamon. Das it! πŸ’ƒ
