Serves: 1 serving
  • 2 ripe bananas, peeled and sliced, frozen overnight
  • 1-2 small, ripe plums (dice and freeze half, save other half for topping)
  • non-dairy milk (as needed)
  • toppings of choice (shredded coconut, dried mulberries, fresh fruit, nuts, etc)
  1. Put your frozen banana slices and frozen plum in a food processor or blender. If you're using a food processor you probably won't need to add any liquid. If you're using a blender you'll probably have to add a few splashes of non-dairy milk to get everything well blended, but be careful not to add too much otherwise it will lose the ice cream consistency.
  2. Blend until ingredients become thick and creamy. This will take a couple of minutes and you will need to stop and scrape down the sides occasionally.
  3. Transfer to bowl, add some diced plum (or make a plum compote!) and other desired toppings. Enjoy!
