The perfect combo of sweet and savory, this breakfast is full of healthy carbs, is vegan & gluten free, and super hearty!

Serves: 1 serving
  • HOME FRIES: 1 medium sized red potato, cubed into bite-sized pieces
  • a thin slice of onion (white, yellow and red all taste good!), minced
  • 1-2 tbsp extra virgin olive oil
  • a splash of apple cider vinegar (or a little lemon juice)
  • salt, pepper, garlic powder to taste
  • optional: a splash of Bragg's amino acids
  • topping: nutritional yeast
  • OATMEAL: ½ cup water
  • ¼ cup organic, old fashioned oats
  • 1 tsp vegan butter
  • brown sugar (I like Wholesome's Dark Brown Sugar, it has a nice maple flavor)
  • coconut flakes
  • ground cinnamon
  • berries
  1. HOME FRIES: Heat a little olive oil in a pan on medium heat. Add potatoes, cover, and let saute for about five minutes.
  2. Push the potatoes to the outer parts of the pan and drizzle some more olive oil in the center. Add minced onion and saute until they start to brown.
  3. Stir the onion and potatoes together. Add apple cider vinegar and Bragg's amino acids, plus water as needed if the mixture gets dry. Cover and cook another 5-7 minutes.
  4. Once the potatoes are brown and crispy, season with a little salt and pepper and garlic powder. Serve and top with nutritional yeast.
  5. OATMEAL: Bring water to a boil. Add the dry oats and turn heat down to low.
  6. Let the oats simmer, stirring occasionally, about 10 minutes or until all the water is absorbed.
  7. Transfer to bowl and stir in vegan butter, about 1-2 tsp of brown sugar (or coconut sugar), and a couple sprinkles of cinnamon. Top with coconut flakes and berries. Enjoy!
