These sweet potato fries are filling enough to be an entire meal and they are totally satisfying. I mean, crunchy and savory wedges with a hint of garlic and cumin, dipped in creamy, tangy magic sauce? Heart exploding.

2 large sweet potatoes, peeled and rinsed
extra virgin olive oil
salt & pepper

The way I prefer is to pour a couple tablespoons of olive oil on a baking sheet and spread it around using one of the sweet potato wedges. Lay the wedges on the sheet and use your finger or a brush to coat the tops of the wedges with a little more oil. Then sprinkle on salt, pepper, garlic powder, and cumin. I just eyeball it based on how seasoned I like my fries. I find it's easier this way because trying to evenly coat them in the bowl was difficult for me and waaaay messier.
But if you go the bowl route, combine 1 tbsp of olive oil, ½ teaspoon cumin, ½ tsp of salt, ½ tsp of garlic powder, and ¼ tsp of black pepper. Add the sweet potato wedges and coat them evenly. Place in one layer onto a baking sheet.
Bake in the oven at 400 degrees for 15 minutes. At this point, take out of the oven and use a fork to flip the wedges over. Sprinkle a little more of the seasonings and put back in the oven for another 15-20 minutes, until the edges are nice and crispy.
While the fries finish baking, you can prepare your magic sauce. In a small bowl, combine a few tablespoons of vegan mayo, a few dashes of Cholula sauce, a couple squeezes of lemon juice, a dash of water, and 1-2 tsp of nutritional yeast. You can tell this is very technical! Stir or whisk until smooth.
These fries are best served fresh, but them cool for a couple of minutes first. I served mine with a salad made of red kale, cucumber, seasonings, and lemon juice. Or serve them as a side dish with veggie burgers. If you don't think magic sauce is as magical as I do, you can use whatever kind of sauce you like. They taste good with ketchup, vegan ranch, or even dijon mustard.
