I’ve said it before and I’ll say it again, I cannot skip breakfast! As soon as I wake up in the morning, I stumble into the kitchen and begin making my brekkies, because I cannot function or talk to other humans until I eat food and drink coffee 😩☕️
For me, it’s all about the carbs. The more healthy carbs I consume in the morning, the more energy I have and the less hungry I am before lunch. That’s what makes this oatmeal and potato combo the perfect breakfast, plus it’s easy to make and goes perfect with a foamy vegan latte. Yum!!
Just imagine… organic old-fashioned oats topped with butter, brown sugar, coconut flakes and berries, then paired with crispy cubes of red potatoes sauteed in olive oil and seasoned with onion and some cheesy nutritional yeast. I like the balance of sweet and savory because you get the best of worlds!
Check out how my take on these classic breakfast dishes that are vegan, gluten free and totally delicious!
Home Fries Ingredients:
- 1 medium sized red potato, cubed into bite-sized pieces

- salt, pepper, garlic powder to taste

- topping: nutritional yeast
4 Easy Steps:
- Heat a little olive oil in a pan on medium heat. Add potatoes, cover, and let saute for about five minutes.
- Push the potatoes to the outer parts of the pan and drizzle some more olive oil in the center. Add minced onion and saute until they start to brown.
- Stir the onion and potatoes together. Add apple cider vinegar and Bragg’s amino acids, plus water as needed if the mixture gets dry. Cover and cook another 5-7 minutes.
- Once the potatoes are brown and crispy, season with a little salt and pepper and garlic powder. Serve and top with nutritional yeast.

If you want a simple breakfast with simple ingredients that is healthy and will give you fuel for a productive day, then this Brown Sugar Oatmeal & Home Fries situation is probably for you 👌
It’s super easy to double or triple the servings depending on how many hungry mouths you’re feeding, and you can get creative with the toppings for both dishes.
Also, be on the lookout for an amazing coffee recipe I’ll be posting in the near-ish future that you can pair with this recipe 😉

Haha! Made me laugh. Reminds me of my father. He says, “Man when I wake up in the morning I feel FAMISHED! When my feet hit the floor I’m looking for food buddy”. Looks like a great breakfast. I could really go for some of that right now. Hope you’re enjoying your new environment. You really get around. 🙂

Sounds like your father and I are very similar lol! I guess I do get around more than most, I just like to see new places! Added bonus, I get sunny, 80 degree weather in January which I love 🙂 Hope you’re doing well!
