I’ve been to almost every corner of Texas and I have lots of favorite places in this great big state. One of my recent favorites is the little known Beaumont Botanical Gardens, located in historic Tyrrell Park. The park contains the gardens, a conservatory, banquet hall, horse stables, golf course, walking trail and a marsh with a boardwalk ??⛳️

To see my photos of the lovely gardens, check out my post on the Beaumont Botanical Gardens. This week’s post is all about the conservatory and the awesome marsh. Below are my favorite photos of these extremely peaceful, beautiful places ☮

9 Quick Tips to Beat Winter Sickness

9 quick tips to beat winter sickness

Nobody likes being sick. Well, there was a brief period of time as a child that I looked forward to staying home watching television all day when I had a cold or the flu. But now, getting sick is something that I dread and try to avoid at all costs ???

Since I’ve gone vegan, I’ve noticed that I get sick way less. Pre-vegan I battled allergies/sinus/colds at least twice a year plus any other illnesses like the flu, 24 hour bugs, strep, bronchitis, etc. The only time I get sick now is seasonal allergies once or twice a year and if I take action as soon as I notice symptoms, it goes away a lot faster and isn’t as agonizing.

Whether you’re vegan or not, these 9 easy tips can make you feel better a lot faster. They will help you fight sickness in a much healthier, all natural way that your body will be thankful for. You can still incorporate your regular medicines if necessary. These suggestions will just boost your immune system for a speedier recovery this winter!

Gluten Free Veggie Pasta Salad

All right, I know it’s almost Thanksgiving and for many parts of the world it’s already cold enough outside to be wearing heavy jackets and mittens, but here in southeast Texas the weather is kind of amazing ? It’s been warm and mild during the day and chilly at night, but not so chilly that I’m freezing my vegan butt off. So even though pasta salad feels more like a spring or summer dish, I’m gonna put it out there anyway because this pasta salad is really delicious and healthy and filling.

For starters, this pasta is gluten free and contains minimal ingredients. I love that. Then it gets tossed in a tangy dressing and topped with tons of delicious veggies. I even added some pre-seasoned, pre-cooked tofu crumbles for added texture and protein ?

This Gluten Free Pasta Salad is perfect for lunch with friends or for making a huge batch to provide you with quick on-the-go meals for the rest of the week. It’s an easy way to get those veggies in ?? if that’s something that’s a struggle for you ?

Pit Bull Awareness Day Festival

A festival dedicated to pit bulls? Those blocky headed, big tongued, wiggly butted, wet nosed beasts that get a rap but are really just as sweet and good natured as every other dog on the planet? Um, yes, I’ll be there!

The 8th Annual Pit Bull Awareness Day Festival happened in Austin, Texas on Sunday, October 23rd. It was held by Love-a-Bull, a nonprofit organization dedicated to rescuing pit bulls in need and finding them good homes. There were lots of vendors, a silent auction, food trucks, and of course the most adorable pit bulls known to man ?

I got there just as the pittie parade kicked things off with a dog walk around the park. So many pibbles dressed up and wiggling their butts! Then I got to explore all the rescue groups, enjoy an intro by local DJ Deb of 101x who is a dog enthusiast, watch some very well behaved dogs demonstrate their skills on the agility course, look at the local goods that vendors handcrafted, and watch pit bulls roll around in the kiddie pools set up around the park.

And everything was to benefit rescue pits! It sort of felt like heaven being surrounded by these fun loving dogs. Here are my favorite photos from the day ?

Easy Eggplant Pizza

vegan eggplant pizza

Hope everyone had a fun Halloween ?⚰?

I discovered eggplant pizza the other day as I was scrolling through Instagram and saw an amazing photo by a vegan food blogger. The recipe looked super easy, which was perfect because I was wanting to make pizza with a homemade sweet potato crust and that recipe was more involved than I had hoped for.

But eggplant pizza? Easy, simple ingredients, filling and oh so tasty ?

This recipe is vegan and naturally gluten free, with juicy eggplant, savory tomato sauce, melty vegan cheese shreds, mushrooms, olives, artichoke hearts and red onion. A much healthier version of pizza but just as delicious. Whoever came up with the idea for eggplant pizza is a genius ??

P.S. If you want to know all the amazing health benefits of eggplant, read this article by Helen Nichols. It will even give you tips on how to pick a ripe eggplant at the grocery store and the best ways to prepare it!
